    Wonderful journey❤ Goa is forever in our hearts as Portuguese; India was our first "baby" so we can never forget it. I visited twice and hope to visit India and Goa again B4 I die.     That's wonderful to know about foreigners writing about Portugal. Specially when they study and they know about what they are writing.     It's interesting her mother-in-law's name is Coutinho. I'm Portuguese and In 2017 I traveled to Goa with some friends. This one indian guy helped us at the airport and told us he had portuguese blood and his surname was Coutinho. Next day we find him sunbathing while sitting on his porch, on a house with the 'Coutinho' tile (in Portugal people often use tiles with their family names to identify their houses). So, either we found a relative of your guest's, or Coutinho is a very common surname in Goa.

    Good luck with your book... We moved to Portugal (the Algarve) in 2021 and love it. I started a KZread channel a month ago which covers everything to do with food (restaurant reviews, cooking and gardening mainly).
