    One of my favorite pasta dishes to make. My mom made it a lot too. I like throwing greens into this. Sometimes right in the pasta water to braise quickly just before the pasta is done, which also flavors the pasta water a little. I toss in broccoli, or kale, etc. Arugula sounds great!! I never used that many anchovies before... I'll have to try that. I also like some freshly grated parm or romano on top as well. Now I'm really hungry. I tried Mark's pasta con sarde yesterday. It was very good. Good video, thanks

    Bittman is the guy who started me cooking way back in 2008. I love this guy. Not sure what he's doing now but I hope he's doing well.

    A quick and very flavorful recipe. It is done by the time the pasta is finished cooking. This will be an addition to our quick weeknight minimalist recipes. Hint: don't be afraid of anchovy, it is the secret to this recipe and balances out well with the garlic, chile, and the bitterness of the arugula.

    I tried this recipe after watching this video, and I loved it! I'm not a fan of arugula as salad simply because of its taste, however, this is such a great way to eat it! And at the same time, adding arugula just makes this dish much healthier! Thanks for the recipe! :)

    Most chile flake is seeds, I'd get dried chiles and deseed them and flake them. The seeds spoil the dish.

    @johnhummel didn't you see the red pepper flakes? ( though i used freshly -cracked black pepper because i have issues with red pepper flakes)

    Interesting- I do see how it would have enough saltiness from the anchovies, but should there be any pepper for seasoning? I might try this out, though I know my family members won't eat it. (They're not as bold flavor loving as I am.)

    I think less viscous. More viscous implies it is thicker but he said thinner.

    I would add some Panko bread crumbs to top it off, instead of arugula I would put some fresh mint, otherwise it looks delicious.

    What is half a cup of dry pasta? How about some proper measurements. Grams, oz. for those of us who don’t measure in cups? 🙂

    Amazing. He doesn’t even know why to add the pasta water. He says it is to continue cooking the pasta if it is a bit underdone. Not right. The starches in the pasta water bind the sauce. Every Italian knows this. Not this guy though. Comical, if not embarrassing.
