    I’m going to leave this comment here because this is the recipe I “followed” when I first tried to make your cheese. A little alteration for my preferences but loosely following this recipe. I’m crying because I thought I messed up, it was late at night and so trying to get the excess rejuvelac out of the cheese was too trying so I put it in a container in the fridge. Wax paper on the bottom and paper towels on top and bottom of the cheese. Didn’t try to wrap it into wheels. That was literally the last thing I did for 2021. Then I just…left it there. Didn’t want to face it. This morning I opened that container as I was cleaning out my fridge. The cheese was just fine, no mold. A little wet but that was it. I tried a piece that crumbled off and it almost feels like bree! I tasted and it tasted like bree! Because I folded in some black seed there were little bits of a peppery bite but it’s sooo good! Even though I “did it wrong” it was in the right way! Leaving it alone ferments it into a soft cheese with a crumbly texture! I did add some starch to it because it’s just a little too soft but- it’s still good! Thank you Connie! I’m so excited to try this again to make some little wheels to turn into hard cheeses and eventually at least one wheel I want to try soaking in some wine for a wine cheese. This has been the most forgiving and inspiring vegan cheese- ever! Thank you!

    MY GOD!! instead of chickpeas I use soy milk leftover, also without potato but more coconut oil (and soy milk leftover) SO SO SOSOSOSOSOSO DELICIOUS 😋😋😋😋 my cheese already has a month, and my family only want to eating it!!! but I want to wait until it is more old to grate but they are desperate!! Thank you very much I have never do a so delicious cheese before !! (And sorry if my English is bad, I'm a spanish speaker 😅)

    OMG Connie, another winner! I made 2 cranberry and walnut cheese’s and one olive cheese (I just cut up black and green olives and mixed them in just before shaping). I resisted the temptation to eat this early and managed to wait 2 weeks before eating. I cannot tell you how delicious my cheese turned out, absolutely amazing. And the presentation is so beautiful. I going to give one as a gift to a friend, think she’s going to be impressed. Thank you for your wonderful channel, it is my go to for everything. 🙂💕.

    @@conniesrawsomekitchen I started watching your videos a few weeks ago, and you've taken the fear out of making cheeses for me. I was so nervous to try to make something for fear I'd waste ingredients, but you're showing me that you can literally make cheese out of things on hand and be creative about it.     Cheeses and eggs are the two foods I have the hardest time replacing. Especially cheese as I love it both melted and at room temp. So many vegan choices just don't taste like cow milk products. I think I need to stop eating cow products for at least a couple months to "Detox" my taste buds and body. But this recipe is very interesting.

    @@lisaaustin1042I did much the same with tofu by eating less and less meat. Plus, learning some ways to cook tofu which are not as oil free but tasty helped transition. So, yeah. I think dairy cheese and I need to go on a break. :D Thank you!

    absolutely great approach, thank you. just one detail I'm trying to understand. How come the cooked rice and potatoes do not spoil during the ripening process of the cheese.?...these are very starchy foods and usually spoil quickly?

    they don't spoil because of the probiotics :D they ferment and makes good bacteria

    Can't wait to try this ! But since it's not cooked, why do you add starch that won't thicken like when heated? Does it really add something?

    it does thicken, and whiten....and on the outside it forms a rind :D plus absorbs liquid

    Hi Connie! I’ve been studying all your cheese making videos and love your method of cooking by feel! It’s how I cook regular meals and foods, so it made me think why does cheese making need to be any different!! :) have you ever tried using curing salt in replacement of starch to form a rind and age the cheeses? I haven’t seen any vegan aged cheese making using this method on KZread and was wondering your thoughts and experience

    Sounds great! That's a really nice cheese :D OK you can make rejuvelac with wheat berries, maybe use vegan yogurt, or even probiotics

    Those look very good! 👏🏽 👏🏽 👏🏽 Cheese was the first thing I forewent because of the price and of the effect on my health (even before becoming plant based), but I loved it and do miss it... Your recipes are perfect for a budget! 18:39 yes, they do get harmed! I don’t know why people just willfully ignore that! 38:51 maybe because of the nuts 😉 (Edit) I am thinking of a possible alternative blending method (inspired by Chef Jana - I have a powerful but very old blender) Melt the oil, blend in sauerkraut, softer ingredients and liquids, set aside, purée the chickpeas, set aside, mash the rice, mash the potato, then knead all the ingredients together like a bread dough.

    Charcoal, is there a separate charcoal for baking/cooking, or could charcoal brackets work , i.e., for fires, or charcoal for aquarium, is there a difference!? Really enjoyed this video!

    you should get activated charcoal that one you can take internal. But if you are on any meds I wouldn't because charcoal pulls toxins and chemicals from your body. So it will leach your meds. Good luck let me know if you try

    Hi Connie ! Thank you so much for your cheese recipes ! (the dough was tasting really nice when I made it !! :) ) My first trial is currently aging in my apartment and I was willing to ask two questions to you. - Is it ok if some points of mold are developing on the exterior of the cheese (at day 5 or 6 of the aging process) - My cheese currently taste a lot like chickpea flower, is it normal, or did I put too much of it ? (I made a mistake on the rejuvelac quantity, and my dough was really wet. I had to put quite an amount of flour to fix this). Thank you very much for your time ! Have a nice week

    I just wrote everything and lost it lol. OK lets try again. OK after you aged it a week u can put it in the fridge to age it. If you see unwanted mold take it off and restarch put in fridge in a box with paper. It should not taste of chickpeas it should be cheesy tasting....if you find next time it's too wet. keep mixture in a bowl and put paper towels on top change as it gets wet. In a few days u sould also be able to flip the bowl with the paper under and draw out more moisture. Soon you should be able to shape it. then u can leave it out to age for a week. Did u use coconut oil?? that helps to firm up when refridgerated. so you can shape it. The first ferment I leave it out one day...then i refridgerate for one day...then i shape it ...then i leave it out for a week in a cool place, with just paper towel on top and paper under...then I put in the fridge in a box....If you don't have a cool place just put it in the fridge uncovered use only paper. on top and bottom. ( remember to always flip.

    I think my rejuvelac made of chickpeas was too active or something (they smelled like fresh lemon) cause all my cheese turned into blocks of sourness, like taking a bite straight out of pickle brine, and were completely inedible. It was so weird cause they started out tasting like a very spicy delicious cheese, but now it’s just sour. I’m not sure what to do, have you ever experienced cheese coming out way too sour, and if so, what did you do with it? Much love ❤

    u can use something else that has probiotics in this cheese if you don't want to use the saurkraut.

    SO what happend is this.. I was watching a lot of your cheese recipes.. that I kind of didnt know anymore en blended, potato, cooked rice, and some riceflour, tapioca starch and spices and miso and cumin seeds.. and then put them in molds, en 2 of them I steamed in my steamer and the last one i put probiotic capsules in it.. and that one is sitting on my counter and the other two i wrapped in paper and starch in the fridge. So I mixed and matched some of your recipes and tips together.. lol.. But they smell really good! Hahahahaahaha

    Is your garage heated? I know you live in Montreal and it’s quite cold there. I also live in Canada in Alberta and it’s quite cold here. My garage is not heated so is it OK to age my cheese in the garage because it may freeze?

    Yes Christel I shall make a video soon :D The good thing about sauerkraut is it's fermented which means it's pre-digested so ur belly can handle it. But if you don't have to...simply use some probiotics :D Rejuvelac is made with wheatberries it's a fermented liquid. I have a video if you ate interested in making it.

    i have used it but prefer not too. the oils run out and the cheese cracks better to do it slowly :D

    I can’t believe it took me 1.5 years of becoming vegan to finally stumble across your channel. I love how raw your videos are! I’ve aged cheese in the past with cashews and they can get so expensive especially if I mess up and I have to throw it out. For this recipe, is it possible to make it with all chickpeas instead of the rice and potatoes (honestly it’s because I’m too lazy to cook it and too cheap to buy pre-made)? I’m still learning to make rejuvalac and have only made kimchi, not sauerkraut, and I don’t want to put kimchi in my cheese 😂 so is probiotic with water to get it blending okay? Thank you in advance if you have the time to respond!

    awwww thank you!!! yes it does get expensive making them with nuts only. But I have been changing it up I have many that are so much cheaper to make and still making and creating new recipes. I hope u try them all. They are all so good. yes use the probiotics. But sauerkraut makes a nice cheese! Also yes u can make it with checkpeas only :D

    Ingredients: (measurements really up to you) -- 2-3 forkfuls of sauerkraut -- leftover rice (she used 1 cup) --1/2 cup chickpeas -- 1 tbsp brown miso paste -- 1 potato (not sure if baked or uncooked) -- salt to taste -- a very very small piece of onion -- a very tiny garlic --4 heaping tbsp of tapioca starch (you can use other starches, potato starch, rice starch) (starch used to elongate cheese) -- a bit of mustard for tang -- 1/4 cup of rejuvelac or sauerkraut water --4 heaping spoonfuls of extra virgin coconut oil if u want to firm it up in the fridge After blending, she adds spices, chili pepper and more tapioca flour to knead Avoid making your mix too watery, it has to be thick in order to shape it. Add chickpea flour if your batter is too wet. Add mixture to a bowl and cover with a plastic bag. Ferment overnight in your kitchen counter. Next day, leave your mixture in the fridge for 24 hrs to firm up 28:31 Next day, scoop some mixture, shape into a disc and lay your cheese over some brown paper dusted with starch. 41:56 leave your cheese in your garage or inside a shoebox, with a paper towel on top. Every day, flip it over and re-starch the top. Replace the sheet of paper if it's too wet. Your cheese will shrink as it dries up. Let it age for as long as you like.

    My mixture was delicious but a little wet. Since I added cornflour and chickpea flour to make it thicker, it’s lost so much flavour. Can it be rescued or shall I carry on and hope for the best? I’m in my first 24 hours and it’s due to go into the fridge tonight. Come to England please Connie. This is an emergency!💚

    I am sure it will be good bur next time do not add corn. There r ways to pull moisture out by adding paper towel on your bowl. And as it firm's u can flip bowl snd put paper towel under bowl

    you can try with out but make sure it gets firm so add extra chick pea flour it's more work but u can do it. add some olive oil. and give that a try.
