Papas aliñás (seasoned potatoes)

Today I present you the "Papas Aliñás" a fantastic potato salad as simple to prepare as it is delicious to taste.
This dish is traditional from the province of Cadiz, in the south of Andalusia and combines so well the flavors of its ingredients that I assure you that you will repeat once you try it.
To get a perfect result, you just have to follow the recipe and these little tips that I leave you below:
It is important that when you are going to bake the potatoes, you choose them all of a similar size. This way you will get them all to cook at the same time and they will be perfect.
The ones I have chosen have taken 25 minutes to cook, but if they are bigger they can take 30 or 35 minutes to be perfect. You will know when, when you prick them, the knife comes out effortlessly.
The addition of tuna, mackerel or mackerel is optional, but it gives them a very interesting touch as well as a nutritional plus by adding protein. In this way, especially with the summer heat when we eat less, it can be perfectly converted into a unique dish.
If you add olives and hard boiled cheese, it will also be perfect.
Try not to use onion but, as I indicate in the recipe, spring onion, with its green part. This gives the dish its characteristic flavor.
Try to peel the potatoes when they are still warm. This way, when dressing them, they will absorb the flavors better.
As for the dressing, it is convenient that you do it in the order that I indicate you: First the vinegar and finally the oil. If you put the oil first, it will form a layer that will prevent the flavor of the vinegar from penetrating the potatoes and the result will not be the same.
This is a dish that is usually served at room temperature, so try not to keep them in the refrigerator until serving time. Think that, in many cases, the cold dulls some flavors and we do not want that.
