Homemade concentrated tomato

The riper the tomatoes are, the darker this sauce will be and the more intense its flavor will be.
Pear tomatoes are the most suitable for this recipe. The reason is because they have much more flesh than most tomatoes and less water.
Garlic is optional, but it intensifies the flavor of the sauce. So, you decide if you want to use them or not.
