Chicken with squid and prawns

Today we prepare one of my favorite chicken dishes where the flavors of land and sea intermingle giving rise to one of the most typical taste experiences of Catalan cuisine.
The mixture of these ingredients makes this preparation a fantastic option for big occasions where you have to meet the expectations of demanding guests.
Be sure to prepare it and delight yourself with its intense and exclusive flavor.
Use quality ingredients. The result depends on it.
So that a celiac person can eat this recipe without any problem, you only have to use gluten-free bread in the mince. The result will be the same.
In case you are wondering, when I talk about "searing" the chicken, I mean browning it over high heat with oil without letting it cook inside. With this we get a better texture and flavor as well as maintaining its inner juiciness when cooking it in our chosen recipe. So, I recommend you not to skip this step.
As for the cooking of both the vegetables and the chicken, apart from the sealing that I have already mentioned, I advise you to do it over low heat. This way you will get a unique texture and flavor. With this you will get the meat to melt in your mouth when you eat it and all the flavors of the ingredients will be integrated in an exceptional way.
If you have noticed in the recipe video, when I clean the squid, I do not remove the skin. This is because, in my opinion, it gives the stew a more intense squid flavor. However, this is optional.
Try it both ways and tell me in the comments box which one you liked better.
