Paleo Coffee Cake - with PEACHES🍑 | So GOOD!

If you love coffee cake, you'll LOVE this gluten-free and paleo coffee cake with peaches at the bottom! Seriously, peaches take this breakfast (or dessert) to a whole 'nother level that's simply amazing, especially when peaches are in season!
🍑PEACH COFFEE CAKE RECIPE:
Serves 8
🥮 For the cake:
1 cup Cassava Flour
1 cup Almond Flour
1/2 cup Coconut Sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Sea Salt
1 Egg
1 cup Almond Milk
1 tsp Apple Cider Vinegar
1/4 cup Avocado Oil (or melted Coconut Oil)
2 tsp Vanilla Extract
2-3 ripe Peaches, diced
Optional: 1 tsp dried Ginger
🥮 For the Topping:
1/4 cup Coconut Sugar
1/4 cup Cassava Flour
pinch Sea Salt
1/2 tsp Cinnamon
2 tbs Avocado Oil (or melted Coconut Oil)
➡️ Instructions:
Preheat the oven to 375 F.
Mix the flours, sugar, baking powder, baking soda, salt, and dried ginger (if using) in a large bowl.
Whisk together the egg, milk, vinegar, avocado oil, and vanilla in a medium bowl.
Add the wet ingredients to the dry and mix until just combined.
Scatter the peaches in the bottom of an 8-inch square pan. Spread the batter evenly over the peaches.
Mix the ingredients for the topping together in a small bowl and then sprinkle over the batter.
Bake for 45 minutes, until the fruit is bubbling and the top is a golden brown. Let cool for at least 15 minutes before serving.

    I love all your videos! Sorry for commenting here. Have you ever heard that thyroid goes to overactive and got inflamed then after few months it goes back to normal or underactive? It happened to me second time… I’m in the overactive phase right now :(

    Yeah, I believe that's a result of the autoimmune attack - I recall reading about that either on Dr. Kharazzian's book or Izabella Wentz's stuff. Something to do with the thyroid overcompensating for not being able to produce enough hormone or something... I'd google their work and see if you can find out more.

    Can you explain how coconut sugar/mapl syrup/honey aren't as inflammatory as cane sugar even unprocessed cane sugar? Isn't it all sugar?
