Oven Fries - CRISPIER Than Deep-Fried

I suppose this is more of a techniques than a recipe. Take whatever potatoes you want. Peel them, or don't. Cut them into fry-like shapes, being sure to get roughly equal thickness, and cut them maybe twice as thick as you want them - they'll shrink a lot during cooking. I do one large Russet potato per person. Boil them until you're afraid they're going to fall apart - I do about eight minutes. Gently drain them and lay them on a pan wide enough to hold them all in a single layer. Drizzle on enough oil to thoroughly coat all the pieces. Shake the pan to coat the pieces and get the fries evenly distributed.
Roast at 450ºF. Check on them after 45 minutes - add more oil if they look dry, and move around any pieces that seem to be cooking unevenly. Roast them some more until they're brown and crispy, maybe another 45 minutes. Be careful not to overcook them - very brown will taste burned. You can pull them when they're still a little floppy, because they will harden as they cool. The ones I made in the video are just a bit overcooked.
Place kitchen towel or a couple layers of paper towel in a large bowl, and dump the fries in. Let the towel soak up the excess oil, and then whip it out. Season the fries in the bowl and then toss. I use coarse salt, pepper, garlic powder, chopped cilantro and grated parmesan.
MY COOKING PHILOSOPHY: I don't like weighing or measuring things if I don't have to, and I don't like to be constantly checking a recipe as I cook. I don't care that volume is a bad way of measuring things - it's usually easier. I like for a recipe to get me in the ballpark, and then I like to eyeball and improvise the rest. If you're like me, my goal with these videos is to give you a sense of how the food should look and feel as you're cooking it, rather than give you a refined formula to reproduce.

    Q: What do you mean you devised this recipe? I've seen this before. A: Cool! I haven't seen another recipe that applies the par-boiled roastie technique to a fry shape, but I'm not at all surprised to hear that others exist. There's nothing new under the sun. But I did work out the particulars of this one on my own. Totally possible I just reinvented the wheel. Still good fries, though! Q: Have you thought about adding baking soda to the water to make the outside more crispy? A: No, but I'm intrigued. Alkalinity helps with browning. I will say, however, that I'm not sure I would want to accelerate the browning process on these. The interior needs a long cooking time in order to get really soft and fluffy, and I wouldn't want the exterior to get overly brown while I'm cooking the interior. Really dark brown on these tastes burned. Q: Have you thought about roughing up the fries a bit before they go in the oven to get more fluffy exterior that'll go crisp in oil? A: That works great with a more conventional roast potato shape, but these long thin shapes are really delicate when they first go in the roasting tray. That little shake I give them is about all the trauma they can take at that stage. Q: What's up with that thumbnail? A: I thought it was funny and intriguing! (And yeah, maybe I thought it could draw the ASMR crowd...) Q: Have you thought about using a slotted pan? A: I'm intrigued, but would't the oil drip out the bottom? We need that oil. Q: Why was your first talking-head shot out of focus? A: I shoot by myself, and the talking-head shots are tough. I had my camera on face-tracking autofocus, I could see on the monitor that it had zero'd in on my face, but it's not possible for me to see on a tiny monitor halfway across the room if the shot really is in focus. Between this and my day job, I really don't have time to go back and fix stuff unless it's a real disaster. I'm learning every video, though, and I think it'll all keep getting better. The entire reason I started making cooking videos in the first place was to work on my video skills. I'm still pretty new to the medium. Q: Why were some of your shots over-exposed? A: I'm still really struggling with how to light and expose for white ingredients. I'm working on it. Everything looks overexposed on the cheap field monitor I'm using, so that's no help. I've tried using the level meter, but the black table and the white plates just seem to throw it off.

    My man. I have no idea how I had never seen this video before. Gonna make this one with my dad. We both LOVE thick cut, potato-heavy fries, to the point where we've had multiple spots we have gone to over the course of my life where we JUST go for the awesome fries, and this recipe seems AWESOME.     You can infuse your oil with garlic and herbs (rosemary for example) in a pan. When the mince garlic starts to turn golden you filter the oil and bake the potatoes with it. At the end, you can add the garlic/herbs back (it will prevent them from burning in the oven). It's quick as you can just do it while the potatoes are boillling.

    As a Brit, I’m going to chip in (pun absolutely intended). I’ve made these before as chips and they work really well! I’ve also just used it as a recipe for roasties and that works great too! One thing I would recommend though is, halfway through roasting, put a few cloves of garlic and a couple of sprigs of rosemary into the tray, just so the flavour can be absorbed by the oil and be transferred to the potatoes. And the seasoning with Parmesan trick is really good as well, I now do that every time I make roasties. Good job Adam!

    My wife and I just made some in memory of a Christmas Eve we spent in England. I put more oil in the pan and went slightly less crispy, but it only took about an hour in a standard oven. Thanks for the recipe!

    Okay, I am eating these as I write this comment. It took me about 3 hours to completely make it, that includes buying it, peeling it, and doing the rest. I use a fan assisted convection oven, so I made them at a lower temperature. 1 and half hour at 180°C. I flipped them every 30 minutes or so. They came out as shown and they are super crunchy. I think some of them came a little burnt and over crunchy, but that's because I didn't take your advice to cut them evenly. Most of the pieces I made were as you suggested and they came perfect. All in all, I skipped on the cheese but used the same garnishing as you did, and they taste delicious. Spent all the cooking time gaming, so yeah, super great fries with minimum effort. Thank you! 10/10

    Hiewii he wasn’t working on the fries for 3 hours and personally it takes me like 20 minutes to peel and cut that many potatoes so I guess it depends on the person. And I peel potatoes in front of the tv so it doesn’t feel like work

    If you want to know how to improve this recipe. Instead of oil. Use goose fat. If you can buy it over in USA. Over here in England it's very common. Especially at Christmas. Put the pan in the oven with enough goose fat to get about a half inch of melted fat layering the pan. Stick it in for 10 minutes to let it melt and get hot. Better results for all things potato.

    I've been making these ever since the video came out. They're so good! I prefer not to cut them into fries, i just chop the potatoes into half inch thick rounds. They don't fall apart as easy after boiling. And a better crunchy-to-fluffy potato ratio IMO

    2:45 google says not to pour boiling water straight down the drain. Apparently messes with PVC piping seals and stuff. I try to drain my stuff into a pot filled with cold water if there is already something dirty in the sink or fill the sink a little with cold water.

There are many commercial TV channels broadcast in the UK, along with BBC channels. The commercial channels pay their way with advertising, but the BBC insists you buy a "TV Licence", whatever channels you watch.     I made these and they were delicious. I paired them with a homemade thousand island dressing, carmellized onion jam, and cheese. I can't eat the Animal Fries at In N' Out because of the cross contamination risk from gluten. There tasted just like I got them from the restaurant, but better and crispier than any oder I have had there. Thank you Adam!

    I make them almost like you do. My Uncle who was in the US Navy in the early 1950's learned how a make them while he was stationed on the General A E Anderson which was a troop transport ship. Two small differences. I steam the cut potatoes rather than boiling them and I use a large cast iron skillet with lard for cooking them also at 450 F. I will try it with olive oil as that would be a more healthy option.

    Made these today. Definitely did not take nearly as long as Adam says. Mine took about 30 minutes in a convection bake oven at 450F and they where like well done. Still really good, just keep an eye on them

    @@datcyanguy7812 what? How is it raw if you already boil it before going into the oven, like if you dont cook it long enough or add in enough oil , it just wont be crispy. But I'm curious how it is raw. Mine did take like 40mins but it came out delicious

    A couple of things I do different. 1) add some baking soda to the boiling water. This raises the pH and makes the exterior more porous 2) let the potatoes sit for a bit after boiling. Sometimes I even refrigerate them. This gives time for water to evaporate from the exterior leading to more crunch, or at least faster crunch.

    I do the same. Makes them a lot better. Also do this to whole (albeit smaller potatoes) in the oven. I also crush them a little bit when turning them half way through. Not possible with fries obviously :)

    @@famshars2389 Porosity increases surface area. More surface area means more exposure to hot oil (if deep frying) or air (if baking) to improve the crispness and crunch. The potato loses more water, quicker.

    @@Mason_Malakai_Leroux Not exactly....they do similar things, but by totally different methods. Adding baking soda raises the pH and causes the exterior of the fry to break down. You get more surface area which leads to more crunch, especially with oven baking. Vinegar lowers the pH and helps the fry stick together. It holds it's shape better and can be cooked longer especially when deep frying. The longer cook time increases crispiness. When deep frying baking soda fries, there is more risk of the fry disintegrating it's outer layers so you don't cook it as long. This isn't an issue when baking in the oven. It's crazy that raising and lowering pH can both lead to crispier fries.

    Another great video. The other secret is to use high dry matter, non waxy potatoes. Here King Edwards and Maris Piper are two choice varieties. You will never get a good fry (Chips to us) from a waxy potato. An other crucial step for good roast potatoes is to toss them in a cullender to rough up the surface before roastin. This works for your fries too, if you leave them a little firmer when boiling. Cheers.

I don't have to pay for doctors or medications ...I went to the ER and they charged me like 10 thousand dollars that insurance covered also still on my mom's healthcare plan until 25... I just wish insurance covered gynecomastia surgery ..because that has ruined my life a lot but they don't care because it's cosmetic even though its a cause of anxiety that actually physically hurts my health

    So much yes. Works with sweet potatoes, but only blanch for 1-2 minutes at rolling boil and coat in corn starch before oiling and roasting
