    Aren’t you supposed to soak meat in salt, baking soda especially lemon juice or some other cleaning agent for at least an hour to clean off bacteria’s and other things that can get on meats?

    Your lessons on the care of raw chicken, how not to cross-contaminate after touching it, and how to clean it are very valuable. Not only do you tell, you show, which should stick even better. I didn't know you could just pull that fat off, for instance. Will definitely look up your recipe for barbecue sauce! That chicken looks so good I've gotta try it this winter. Thank you, Chris.

    I thank God that I had grandparents, mother and aunts that cooked and taught me how to cook. I thank God that you're hear teaching people 'how' to cook. I find your videos, so detailed, in depth and concise...If someone that didn't know how to cook, just starting out in life would watch you they'd be up to speed in no time! Keep up the good work!

    Hello Ms. Chris! Blessings to you and your family! Now,this is real BBQ chicken! I am so grateful, for you! And,I love that you still cook big "Sunday" dinners. I still cook every day, but bigger on Sunday. It's nothing like coming home from church with your family, and sitting down to a delicious meal. Blessings to you always!

    Hi Ms. Chris, I did this chicken yesterday after viewing this video 10/20/15 this is the best b b q chicken I've done. all b4 I use to keep some of the juice in the pan and the sauce didn't seem to stick as well, yesterday I drained it all off, put the sauce on and let it sizzle a little and baste it some more and let it do it's thing and when I finally took it out, it smelled so good and let's not talk about the taste, thanks for sharing the secret.

    Miss Chris, I feed about 50-60 homeless and very poor people every Monday morning downtown. I want to use your method of oven baking chicken, but want to know if there are any adjustments when cooking such a large amount - cooking times, etc.. I imagine I'll need 4 of those foil pans full. If you have any tips for feeding a group of 50-60 people - we serve on the sidewalk, so no electricity or anything. We warm everything at home and transport there in coolers. Would welcome any suggestions for wholesome dishes that can be made for little money, ideally made ahead of time and just warmed up next morning.

    Just used that BBQ sauce on some baby back ribs. Then I heated some in a pan to thicken it and served it on the side for dipping sauce. My family said that BBQ sauce was so good they could drink it. I told them it was my Momma Chris’ recipe. Thank you!! :)

    Thank you, thank you, thank you, Mrs. Chris! I made your recipe for leg quarters today Sunday 10/15/23. Mom never cooked them cause she only liked drum legs and wings💜. I had a 5 pound bag that had been sitting in my deep freezer for a while, and I took a deep breath and made them. I was always afraid of them being undercooked because it was both parts together(I always split them apart) Crazy thing is, I can cook the mess out of a whole turkey but it's something about those leg quarters... Back in the 90s I called myself trying to grill them at a park. They were undone and that was the last time I ever attempted.😂 Anxiety over cooking certain things is real. I have saved so many of your videos in my collection over time❤🌹 Sorry so long but this meant alot😊

    i absoutly! loved this recipe for bbq sauce!!! sorry that i am late in commenting on it but i have not been privy to you tube...your way of cooking is my way because it takes me back to my childhood when i watched and helped my mother in the kitchen cook for my brothers and sisters (in total there were 15 of us) i now am a major influence in my family,s life when it comes to gatherings and our family reunion cooking which of as last year (2016) was about 200 of us gathering and i did the majority of the cooking and serving of the food alone... well worth it but proud of the challenge that i embraced with pride . i took your advanced prep work with seriousness and was able to accomplish this task with less stress, no back talk and deliverness to allow eoom for me to actually enjoy seeing and having a great time with my family in between! don,t talk about clean up though i had THAT covered! i love the simplicity of it all and it really does keep my visits to the bbq joints on the down low!!! keep cooking..keep me looking!!! janice simpson. holler back if you can. love to know a good corned beef and shaving it down receipe

    I do mine a little different. I clean it and then add lemon juice then rinse it. I marinade it in the seasoning so it can get under the skin. I love the seasonings you use. I gotta try that! so good

    A good way to clean the fat and "liver" part of the chicken is to wash in cool water and salt.Rub the salt into the fat and chicken and the fat dissolves away!

    Chris you clean chicken as I do!!! Good old kitchen shears!!! I clean chicken leg quarters and thighs like chitterlings!!!! I get all that fat and veins, excess skin outta there!!!! Love to watch you cook because we do so many similar things in the kitchen, so I know "Chris can cook 4 me 2" Peace and Blessings!!!!
