Ostrich Steak With Mushroom Port Sauce

Ostrich tastes similar to beef and is packed with nutrients and flavor. Mushroom port steak recipe is to die for!:muscle::cut_of_meat::wine_glass:
Ingredients:
8 oz top loin
1 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
1 tbsp garlic, minced
1 tbsp shallot, minced
2 tbsp butter
2 mushrooms of choice, sliced 1 cup port wine
1 cup beef broth
1 tbsp balsamic vinegar
2 tbsp flour Preparation:
Lightly oil filet & season with salt, pepper, & garlic.
Place filet onto a hot grill & cook 3-4 minutes. Rotate filet clockwise 90 degrees & cook another 3-4 minutes. Turn filet over & repeat.
Once steak reaches desired doneness (we suggest 120-130F), rest covered for 5 mins.
Lightly sauté garlic, shallot, & sliced mushrooms in 1 tbsp of the butter. Remove & set aside.
Add port into the same sauté pan & simmer to reduce until syrupy. Then, add broth & continue to simmer.
In a second pan, melt remaining butter. Add flour and blend until smooth to make a roux.
Stir roux into the sauce until it begins to thicken. Then, add mushrooms, garlic, shallots & balsamic vinegar. Simmer for 3 minutes.
Spoon sauce over the steak & enjoy
