This intrigues me and confuses me at the same time haha you've essentially reverse seared this like it was a piece of steak, but if this is anything like Venison chops I've had before I feel like this would be rather tough given how lean the meat is; don't get me wrong, it looks delicious! I'm certainly not opposed to trying an unconventional meat but I wonder how a braise would be, like an Osso Bucco for these? Also, after seeing how those bones roasted up have you tried doing anything with the bone marrow? I'd be suuuuper curious about a "flying" meat butter video 😂😂
Many people are surprised to hear that ostrich resembles steak in the culinary sense. It tastes and cooks similar to beef! We reverse seared this but braising or slow cooking these would work just as well. A boyfriend I was with used to have ostrich but since they were taking over his business, he just put them in his freezer, which I had no idea he even had ostrich and my sister said yeah you did. I said I did. She said remember when we were come from down southand come home to see family. The kids and I showed you that place I went. Oh I don’t remember it but man he put some on the grill and I was really shocked how good it taste. I could not believe it taste that good

It's low in calories, 97% lean, packed with protein and iron. We can officially say ostrich is the healthy alternative red meat.
Grassfed beef is probably better then grain fed ostrich meat. But definitely not unhealthy in the slightest.
Ostriches cannot survive on grass, we feed them the closest comparison to what they would typically consume in the wild. Although we cannot compare apples to apples with this, nutritionally, ostrich is a healthy red meat in which those with Alpha Gal Syndrome can safely consume.

Some people's diets don't allow them to consume large amounts of fats, it's considered good for a large amount of people, however, those with dietary restrictions should know there's an alternative :)

Ostrich is a more sustainable alternative compared to beef in terms of the Greenhouse Gasses they emit, as well as the reduced amount of land, water and other resources they need to be at the appropriate age for harvesting.

Thanks for the comment Aaron. This is REALLY important to us. Doing good by the environment by using fewer non-renewable resources, using completely up-cycled and recyclable packaging (made from recycled plastic bottles), and simply creating less waste by using EVERYTHING - this is what we're all about. However, I was only in middle/high school back then and didn't know what an ostrich was ;) In the last 10 years, we have created a vertically integrated, economically sustainable company (and industry) that won't be going away like it did last time around.
