About:
Jason and Lorraine. In 2016 we sold most of our belongings and left the city in southern California to start a small homestead in the mountains of North Carolina.     Save the onion skin. Rinse them. Boil them in spring water to make a tea or add salt to make a broth. It has natural quercetin.👍😊

    Kayla Austin I live in Idaho and I have a hard time thinking of a reason someone would move to Kentucky from here? Yes, it’s beautiful there, but what about the humidity, the snakes, the ticks, the crime, etc.?

    NKY....Sorry, I didn’t mean disrespect to your beautiful state. I just love Idaho so much, I can’t imagine wanting to move back east. Maybe I was misinformed about the things I mentioned, not sure. I know you do have a lot more humidity than we do, though...although that wouldn’t be hard to do, as Idaho is pretty dry.

    I Dehydrate mine extras. I use this for making salad dressing or Tzatziki Sauce, or veg. dip. I also do the same with tomatoes after I have enough canned. This saves on freezer space. Dehydrator was best purchase I have made. I do spices, kale, collards, etc After dehydrating I put it in a blender and blend it down and put it in jars.

    I dehydrate yellow summer squash and okra with a little fine sea salt and they are delicious as snacks. I am not a squash or okra fan either.

    I just love how your veggie patch looks like mine! I've even stopped staking the tomatoes and noticed that as they vine out on the ground they put out roots from the stalks and this year I seem to have so many more tomatoes by doing it that way. It did take me a while to get out of the 'standard' tidy patches when I began permaculture 4 years ago. we also had too many cucumbers despite me vowing to grow less this year. I've now run out of jars for pickling so smoothies is a great idea. I have been making them with the excessive amounts of courgettes we've had too...with a banana it's wonderful on a hot day if you keep the courgettes in the fridge. Bravo and love! Louise aka Mermie

    Wow love the info on Not staking your tomatoes.... am a newbie here and I can't seem to keep tomatoes upright. My garden is somewhat stealthy...so not a weed free area. Lol Don't want random peeps knowing what I'm growing, especially these days. I mean I'm happy to share with family and friends but not trying to advertise "free food for all".

    Oh wow….I would not have peeled them. All the nutrition (and protective properties of the plant against predators, which protects us, also) is in the peel.💕 This could be because I don’t have many, so I’m keeping all the goodness from the ones I do have.

    Rinse the onion stalks and paper and combine with the cucumber peel in a pot, cover with water, heat and simmer, let it steep like tea for the day. Strain it and use the same method to have delicious frozen soup stock cubes, too. You can use the cucumber juice for a nice face/skin treatment, or add some to a bath. The body will absorb the hydrating nutrients from the outside, too. Combine with sugar or salt for a nice exfoliant 'paste'.

    This is such a good idea! maybe one tip, whenever you mix something, the nutrients will evaporate out of the mixture if not frozen directly, it might be a better idea to freeze them all at once to contain al of the nutrients. Anyways, thanks for the video!

    Great idea! Cucumbers are great to just peel, slice & place in water and refrigerate for nice cool & refreshing drink. They are also great with tomatoes, onions, oil, vinegar, salt & pepper(best after refrigerated a day or so). Blessings...

    Once when we were living in Portugal we went out for the evening to a dinner and classical guitar concert and were served a cold avacado and cucumber soup. It has to be one of the best things I have ever eaten. We’ve made it since we have been back in Calif and were able to find several recipes online. You might want to save some of your little cubes to try in the soup.

    We grow two varieties that make this easier - the skins are tender, no need to peel! Dragon's Egg and Crystal Apple do very well for pickles, a cold soup and what you're doing. Great idea - I have more pickles than I can use as it is!

    thanks for this idea.I have a stint in the back of my heart,so I can't have anything with vinegar in it..No pickles for me,sad.But learning how to eat without it.thank you,Your homestead is looking great.     Thanks for the idea! I had a bumper crop of cukes this year. I, too, canned pickle relish, pickles, etc...that this is a refreshing change. A cucumber ice cube in a glass of water during the extreme Florida summers sounds like a win win!!

    Lots of vitamins in skin. I slice them flash freeze on cookie sheet than put in ziplock to use in 💧water Nice looking juice

    Excellent idea. I can understand you peeling the yellow cucumbers but do you peel the green ones too? As you're organic there's no need to do that and the skin is filled with chlorophyll which is a valuable phytonutrient. I'm growing outdoor cucumbers too and i think I may freeze them in chunks to put in the blender for smoothies as I only have 3 plants...looks like you guys have lots so blending before hand is a great way to save space in the freezer.

    Just curious why you don't puree them with the skins on? I use cucumbers every day in my smoothies and I leave the skins on them for more fiber. And I don't really notice any difference in the taste. Just a thought.

    The reason why cucumbers dry out is because you let the fruit overripe and in this case the plant perceives that it has finished its growing season. If you don't let them overripe, your plant will continue to produce cucumbers.

    one year i sliced some and put in the freezer to fry later. wife never did fry them so they wound up in the compost pile. fried cucumbers are imo better than fried green tomatoes. this year i have pickled some. pickled 3 quarts so far and lacto-fermented another 3 quarts. those are over half gone already but the pickled ones were put away for later. of course i also eat them raw with a little salt or in a salad as well as add them in a stir fry. they are so versatile and i have not even gotten around to making any smoothies yet. did i mention i also gave my neighbor some and my daughter as well? yeah they have done pretty well this year so far and i have planted a few more a few weeks back so maybe they will continue up till frost which is usually around the middle of november here and right now is the 2nd of august.

    If you add a little lemon juice it will prevent some of the nutrients from oxidizing ☺️ great idea, I will try this. I have more cucumbers than I know what to do with this year

    Great idea for using all those cukes!! You’re braver than me eating the yellow ones. LOL I tried one, one time and it was so bitter I couldn’t handle it. I’m kind of a baby though so pay me NO MIND! LOL 😆 I literally have given cukes away by the ton because I just didn’t have any more ideas for use. I made dill pickles for storing, dill refrigerated, sweet and sour refrigerated, salads, pasta dishes, etc. I even breaded one and tried frying it...DONT BOTHER...it was AWFUL! Hahaha I just couldn’t help myself and had to try. 😉 Thanks so much for this great idea. God Bless ~Lisa

    Wonderful idea and great smoothly preps! Your garden has done so well this year. I'm starting my fall plants for my containers, as the terrible heat is taking its toll on the few vegetables .i can grow. Can't wait for the Roma tomatoes to can up for winter sauces.

    Great vlog. Didn't think of puréed. I was eating cucumbers 3 x day and giving the chickens 2/ day sliced lengthwise as they Really like them. Grew some great tasting cukes this year. Going to try pickling next year

    That's a good idea because everyone starts running out of ideas for their abundance of cucumbers. Another idea to help speed along that process is you could also fill ice cube trays and then empty them in with your others. Just a thought.

    You have to try adding a pinch of salt to the cucumber juice! It’s more hydrating than coconut water

    great idea, to save freezer space, you could juice them, missing the fibre but the other things you smoothie will have that. also skins!

    If I can find it (lol), its been awhile. Pretty much any pureed cucumber soup should be fine (in case I can't find the recipe). My present hubby doesn't like it, so I don't make it.

    How do you prevent the cucumbers from getting soggy when pickling them? Or at least trying to keep them somewhat crunchy when pickled? I also wondered if certain varieties stay crunchier when pickled more than others? Another thing I wanted to ask is that people used to think that the only way to keep cucumbers crunchy in pickling etc was to pick them when smaller and younger. I wanted to ask about a way to avoid that, because it doesn't make sense. Why pick it when its 1/5th size, and lose all of that food volume, instead of trying to look for another way? Its a huge food volume loss to pick them purposely small.

    That's ingenious! If you have an abundance of the yellow cucumbers in the Fall, they make a wonderful relish. The old recipe I have has more mustard in it for the older cukes. I just found your channel, so I'm not sure if you can or ferment for Winter storage. I can, but suppose it would easily adapt to a ferment as well.

    If you thought you had a lot in your basket you haven't seen a load of cucumbers lol. This year the straight 8's I grew got to 15 inches long and 6 inches in diameter. If I could post a pic on here Is show you one laying on my thigh that filled an entire half gallon pickle jar and part of another.

    So the super over ripe ones are still okay to use? What about for pickles? I have soooooooo many yellow, almost orange ones (they are a pickling variety) and I'm not sure if I can still use them. They are probably 3 times the size they should be because like you guys ours are going CRAZY with production! We only have ONE plant too! I was wondering also if I could thick slice them, dehydrate them, and freeze them until I have time to can them into pickles. Do you have any experience with that?

    I did a first time garden small but a lot of different vegetables and fruits. I want to can but I don't know if I have enough of veggies. Can I can a little at a time ? I don't really know how to can that's why I am watching this.

    I think freeze the Juice in small ziploc bags like one cup in a bag would work? Why little cubes?

    Freezing food from the land is not equivalent to food preservation Think "no power" food preservation options Sorry I'm old & have preserved food with my grandma since I was little & freezing cukes is not true preservation-just to be clear. You did do a great job on the freeze method 👍🏽

    “Store it in a mason jar…” 5:13. “…and refrigerate it…” How long can the cucumber puree stay fresh in the refrigerated mason jar? Helpful video. But I was actually looking for a way to keep the exposed cut end of a cucumber from going bad. Thanks.
