Claypot Chicken Rice
Ingredients:
Serves 3 - 4 pax

Marinated chicken
+++++
250g boneless chicken thigh meat (remove skin & cut into bite size pieces)
1 tablespoon oyster sauce
1 teaspoon light soy sauce
1/2 teaspoon sugar
1 teaspoon rice wine (or water)
1.5 tablespoons of cornflour
A few dashes of white pepper
1 tablespoon sesame oil

Fry 10g of dried salted fish until brown and crispy

Sauce
+++++
1 tablespoon shallot oil or normal cooking oil (Shallot oil recipe: • The Ultimate Seasoning... )
2 tablespoons premium dark soy sauce
1 tablespoon light soy sauce
80ml or 1/3 cup water
1 teaspoon sugar

Other ingredients
+++++
2 cups or 300g of jasmine rice (use a rice cup to measure)
2 cups or 340ml of water (use a rice cup to measure)
60g of Chinese sausage (slice the sausage first then soak in hot water for about 5 mins to remove casing)
1 piece of wet salted fish
A handful of your favourite greens (we used kailan or Chinese broccoli)
Pour the sauce over the rice and add the crispy salted fish on the rice before serving. Mix well and enjoy.

I’ve tried many claypot chicken rice recipes, always yearning for the same taste as the stalls in KL. Some had wrong portions for the sauce, some had too much sauce, others had different cooking methods that in the end didn’t taste anything like the original. But THIS recipe is perfection!! The taste is exactly like back home, the rice has that slightly shiny texture, just spot on to every measurement. The only things I did differently was I added garlic n ginger to the marinating chicken and used chicken stock to cook the rice. Thanks so much!

Loveeee this recipe! I double up the recipe and cooked 4cups of rice so that I can keep the extras in freezer. Just microwave it and workday lunch is ready! Great for this pandemic season to bring own lunch to work. Roland & wife, thank you so much for all your yummy recipes!! My 2nd attempt to make this today. Improvised by: 1. Adding ginger juice & smashed garlic to the marinade and marinated overnight. 2. Adding homemade chicken stock powder into rice. 3. Using the water from soaking the mushrooms for the rice. My husband and helper both loved it! Thank you Roland!

Hi Rolland, what a lovely dish would love to indulge into it, but such a pity we dont get the salted fish to make the crispy, nor the other salty one. Just look at how lovely the dish is and imagine the taste. Bona petit!!!

Hi Roland, it was really a very flavourful dish..thanks for the receipe. Could you reccomend a good claypot for this as I used the Corning ware to cook this and the bottom layer was burnt and it was really difficult to clean.

Roland it looks so good, looks pretty easy to prepare. Can you tell me why you use white pepper? Does it have a different taste than black pepper. Thank you love your channel.

Just had my breakfast and suddenly my stomach is growling again after watching this video. I love this all-in-one-pot dish. I have a question though - can I use a normal stainless steel pot to cook this to get the crusty rice bit at the bottom? I'm scared of burning the whole dish. Normally, I'll use the rice cooker but I don't get that yummy crust.

Can you also achieve the crispy rice at the bottom if you use a Dutch oven like Le Creuset or Staub ?
