Made this one with a can of Sardines... I strained the oil, dropped them in just before the eggs and broke them up mixing them into the sauce. Another winner!

Buenos tardes - I’ve just cooked this for my breakfast and can confirm it’s a very tasty meal from such simple (and cheap) ingredients! I adapted the proportions slightly for one person: basically one small courgette about 150g and keeping the other ingredients in balance, other than the eggs as I “needed” three!

This was a great video! Thanks for sharing your recipe. When I salt my zucchini, I add a weight (usually a mixing bowl filled with water) on top of them. This pushes more water out of the zucchini than you get from gravity alone! I usually allow 1 hour to get maximum effect. Yes, I get some discoloration but this is quickly concealed by the wonderful tomato sauce. Happy Cooking!

I will absolutely give this a try, but it just seems to be a little too low-fat to deliver the best flavor. I know there is fat in the egg yolks, and I am quite willing to be wrong about this, but I am thinking that some sauteed mushrooms or some spicy sausage crumbles would take it to the next level. 🤔
