Locally, Zukes are know as Meow Sticks, aka Cat Bats. Me Sainted Creole Mother would have loved this dish: VERY nice light Roux, will try this for the holidays, local cats thank you. .

Next time I have zucchini I sure try this recipe.
Yet again, another gorgeous Spanish veggie recipe that showcases Albert's respect for the ingredients he uses. Many cooks suggest salting and draining eggplant, allegedly because some varieties have a slightly bitter taste that some people don't like, but they never mention salting and draining any other veggies such as zucchini, cabbage, etc. As Albert explains, the real reason is to retain the vegetable's original texture after the cooking process.

Aubergines used to be bitter decades ago, modern varieties aren't. Today the main reason for salting them is to firm them up for dishes where you're going to fry or roast them, so they don't turn to mush. I don't see any point in salting courgettes though, and certainly not in a dish like this.

@@psammiad I guess it depends on your preferred texture. I never used to salt zucchini/courgettes, but they always did cook up rather watery. Now that I've tried salting them, I'll never skip that step again, because I so much prefer the firmer, denser texture.
