Itik Tim / Nyonya Salted Mustard Green Duck Soup
Ingredients for 6-8pax:
• 1kg Duck Meat (approx. 8-10pcs of duck parts)
• 350gm Salted Mustard Green Vegetables (kiam chye)
• 3 liters Water
• 2pcs Tamarind Skin
• 2 tsp Chicken Granule
• 1 ¾ tsp Salt
• 2 Tomatoes (optional)
• 1-2 tbsp Brandy/Cooking Wine (optional)
Method:
• Cut Kiam Chye into desired pieces.
• Soak & clean several times with water changes.
• Boil Kiam Chye till become less salty, drain & put aside.
• Boil 3 liters of water, add in duck meat & kiam chye at the same time.
• Add in chicken granule & salt, boil for 1 hour or till duck meat & kiam chye becomes tender.
• Before off fire, add in tomatoes(optional) boil for another 5 minutes.
*using pressure cooker tips:
• Use only 2 liters of water.
• Cook the duck meat for 20 mins then add kiam chye & cook for another 10-15mins.
