Northern Vietnamese Beef Stew

Vietnam kept the good things from their French colonial times. Among those are a smattering of French cooking techniques and a love of crunchy bread to go with them. This Northern Vietnamese beef stew combines classic french cooking with the Vietnamese love of topping with fresh-cut herbs, to create a mix of tastes alternating between savory and aromatic on the tongue. This is one of the easiest recipes in our collection, but one you'll want to come back to again and again, particularly as you notice that the stew continues to get better into the second and third day of eating it! There are very few cases where Vietnamese will make food that can be eaten as leftovers and this is one of the few.
