I will show you a step by step recipe for making cherry cheesecake with cherries in the oven. We will prepare the most delicious homemade cheesecake with sauce: a light, delicate, not sugary dessert with a light berry sourness. Just lick your fingers!

Base:⠀⠀⠀
- 150g cookies;⠀⠀⠀
- 35g butter;
Filling:⠀
- 600g Philadelphia cheese (any other creamy curd cheese);⠀
- 110g of sugar;⠀
- 2 eggs;⠀
- 120g cream;⠀
Cherry Sauce:⠀
- 250g cherries;⠀
- 50g of sugar;⠀
- 7g corn starch.⠀
THE BASIS
1. Grind the cookies to a crumb state. Add melted butter and stir. You will get a wet crumb that holds its shape well.⠀
2. In the shape of D = 18cm, lay parchment for baking from below. Pour in the cookies and level with a glass.
FILLING
3. Mix room temperature cheese, cream, eggs and sugar until smooth. Pour the filling onto the base.⠀
4. The oven should be heated to 120 ° C, put a baking sheet with hot water on the bottom.⠀
5. Bake for 2 hours at 120°C. The center of the cheesecake should be slightly wobbly when done. When the cheesecake is ready, open the oven door and let it cool. The finished cheesecake should cool to room temperature and only then it should be put in the refrigerator for at least 6 hours to cool, and preferably overnight.
CHERRY SAUCE
6. Rinse the cherries, remove the seeds. In a saucepan with a thick line, mix cherries, starch, sugar and put on fire, bring to a boil and boil a little more until slightly thickened. Remove from fire and cool slightly. Once the sauce has cooled, pour it over the cheesecake. Then let it stand for about an hour in the refrigerator to allow the sauce to stabilize a little and cool. Cheesecake is ready!

    Здравствуйте а можно использовать малину в место вишни?

    Здравствуйте, да можно. Малиновый слой будет другая пропорция 150гр малины, 40гр сахара, 1ч.л крахмала (без горки). Можно ещё малиновое варенье использовать, просто проварив с крахмалом, чтобы не жидко было 🌷
