RECIPE
INGREDIENTS:
For the Lasagna
1 tbsp canola oil
2 lbs. fresh chorizo sausage meat
1 1/2 cup tomato puree, divided
2 cup beef stock
2 cup ricotta
1 cup queso fresco
2 eggs
1 cup grated parmesan
1 tsp fresh ground pepper
16-20 uncooked lasagna noodles
2 cup grated mozzarella cheese
For the Salsa Verde
1 jalapeno, finely chopped
1/2 chopped cilantro
1/2 cup chopped mint
1/4 cup green onion, finely chopped
1 garlic clove, minced
zest and juice of 1 lime
3/4 cup olive oil
1 tsp fresh ground pepper
DIRECTIONS
Heat canola oil in a large pan over medium-high. Crumble chorizo into the pan and cook until caramelized and fragrant, about 5 minutes.
Add in 1 cup of the tomato puree and beef stock. Bring mixture to a boil then reduce heat to medium and simmer until mixture reduces into a thick sauce, about 30 minutes.
Meanwhile, mix ricotta, queso fresco, and eggs in a large bowl. Stir until combined and smooth. Stir in parmesan cheese and pepper.
Preheat oven to 350F.
Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Cover the sauce with uncooked lasagna noodles, breaking them as needed to create a single layer. Dollop cheese mixture over noodles, then sprinkle mozzarella and 1/4 teaspoon dried oregano. Arrange another layer of noodles over cheese, then ladle meat sauce followed by cheese mixture, mozzarella, and oregano. Repeat 2 more times.
Dollop remaining tomato puree over the top layer of mozzarella
Bake in the preheated oven until edges are browning and the top layer is bubbling about 1 hour. Let rest for bout 15 minutes before serving.
Meanwhile, make Salsa Verde by mixing all the ingredients in a small bowl. Stir to combine
Serve lasagna sliced with salsa verde.

@@Daniel-bt7be I think just a dash is filmed in like a 3-4 day cycle. So his manic behavior and yelling just gets exaggerated due to I'm guessing 11-14 hour days stacked on top of each other. It's like he's working the line again.
For April fools, I want Matty to switch show styles with someone like Andrew from Binging with Babish. Matty would produce a totally serious, well put together cooking video and Babby would scream at the top of his lungs about nothing.

Things I love about Matty Matheson: -he doesn’t portion anything. Why worry if you’re adding too much of something when you can have MORE FOOD. -he’s always tasting during cooking. That’s how you know it’s good. Why wait to taste? Enjoy your own cooking, even before you plate up. Don’t deny yourself any happiness. -he’s always adding little things. I love his saying, “cooking never stops.” It’s true! Why be satisfied with what you’ve got, when you can keep improving it even as you eat it! -his sense of humor is so grounding. He feels like a normal guy, and the mistakes and the little pauses he leaves in feel natural. I feel like I’m sitting in my best friend’s kitchen while he makes me a hot dish after a long day. Then you were lucky and had a good work environment. I know it both ways. The one you described where everyone got along and we had a good time and the other, where everyone was screaming during tense hours, uptight and overly serious about what they were doing. The latter one was a higher class restaurant, the former a more laid back italian style one. Sure i got paid more on the latter but i literally felt as if my joy for cooking was slowly drained from me.

I love this show because its not perfect. When i cook at home things never come out like they do in the book so when i see m Matty deal with real shit im like yep i done that before and then he shows you how to pull yourself out of a misstake into a bad ass dish. Love you Matty

The slow decent into madness and self destruction. Its like watching a neutron star collide with black hole. Its beautiful.
The best part about Matty is he’s been sober for years, but you’d still never know it 😏

Sometimes people are like this and it's just an externalization of the internal monologue with extra emphasis thrown in for fun. I do this. Even when alone. Sometimes people are like "r u OK?" and I'm like 'yes, fine, I just like yelling.'

*Seeing Matty with no pants on Christmas morning* Now this...does put a smile to my face.
My kids and I watch this show all the time when I'm stoned.
It amazes me how these 20 minutes are 95% Matty waiting and screaming and it is still way better then the whole of youtube and Netflix combined
