That chicken is just perfectly done. It is fully cooked. I have had chicken like this many times. it doesn't have that mushy feel of undercooked chicken.

unfortunately the way chicken is raised now means that the marrow leaks easily, making chicken look raw/undercooked. i doubt a michelin starred place is serving undercooked chicken that's unsafe!!
