halos pareho tayo ng version .. wala akong kinchay pero itry ko mag lagay ng kinchay at gayahin ko ang pag prito mo .. ganda kasi ng kulay ng lumpia mo..

sir Kusinero architect ako ho ay assistant cook sa Chinese pilipino restaurant. ang gawa namin sa lumpia shianghai ay nilalagyan namin ng 5 spice para mag lasang Chinese taste a little bit. at pang binalot namin isang straight di namin fold ang side . then ipipila namin ng sunod sunod at takipan ng cut right at Patons ulit. then ilagay namin sa freezer . after next day cut namin sa 4 or 6 pcs. then lagay sa plastic ziploc bag counting 50 pcs or 100 pcs. Para sa mga orders. I used piping bag yung ginagamit na plastic piping for icing . sa pag pressed ng lumpia meat sa wrapper para uniform ang sizes.
Wow! Ganyan luto Ng inang ko Nung nabubuhay pa cya at gumagamit cya Ng extender na patatas Kay a mas malasa.. salamat sa iyo naalala ko kung paano magluto ang inang ko. Magluluto uli Ako nyan. Kc tinamad nko magluto nyan kc matrabaho. Pero iba talaga Yung authentic ang proceso Ng luto gaya Ng sa iyo.
sinubukan ko ang recipe na to . wla akong massabi kundi the best sa lahat ng natry kong recipe. masarap malasa at juicy ung meat . dinipfry ko lng sa 130 degrees in 7-8mins super sarrap . thanks kusinerong arkitekto👍🇵🇭🇳🇱
pag nag gawa ako ng ng lumpiang Shanghai nilalagay ko sa piping bag ang meat na mix na at binubutasan ko yung sa dulo ng Piping bag sa size na gusto ko at madali siyang ispread at mag lalagay akong lima o sampu na wrapper at nakahilera sila at spread ko na yung laman at saka ko sila i roll

Mr arkitekto, After frying, I put the lumpia standing up in a strainer. I think that is better than lying down, so, oil drips down. Right. Another comment on the wrapper, if it is kinda hard, which as you say breaks easily when you roll the lumpia, what you can do is steam the wrapper for a short time and it becomes pliable again. You can’t help it if the wrapper you bought is kinda stiff, you can’t choose wrappers in the freezer section here in the Filipino or Asian store. Just FYI. Thanks.

usually ang singkamas nilalagay kapag different vegies ang laman ng lumpia tawag, ang shanghai wala halos vegies kundi sibuyas and carrots

Salamat sa advice sa pagpalamig ng lumpia may natununan din
Ang sarap naman naguto ako sa luto un marami salamat
Instead of kintsay (mahirap hanapin yan sa CA), you can use celery stalks and leaves. I prefer making my lumpia short -- they are cute on the platter and easy to handle. Sigurado ka na ang karne ay luto sa loob. Plus, I don't have to use a big frying pan & waste a lot of oil. I can use a medium pot which causes less splatter on your stove. The smaller-size lumpia will cook faster also. To keep the fried lumpia warm, place them inside the oven at 150-170 degrees, on a serving platter that's oven-safe. So when the guests arrive, merely put a bowl of lumpia sauce on the platter and serve immediately. The guests will think you slaved in the kitchen, where in fact the little cute lumpias were just waiting inside a warm oven. In the meantime, you have had some "me" time to shower, get dressed in a cute frock, put on some perfume before people come flocking to your home, with the aroma of lumpia in the air! Guys and gals, I have more lumpia tips... btw my husband married me for my lumpia... believe it or not!

@@melanies.4180 Kintsay is not the same as chives. I have heard that chives' flavor is a cross between spring onion and garlic leaves. I have yet to confirm that. Chives is used as a garnish on sour cream on top of a baked potato. In my garden, I grow spring onions. But I would love to grow chives. Are you in the US?
