My Favorite Summer Time Casserole - Easy, Quick, and Versatile!
In this video I share one of my favorite summertime casseroles. I learned how to make it many years ago from a Blind Pig & The Acorn reader B.Ruth. I love making the casserole from the things we grow in our garden here in the Appalachian Mountains.

I make a very similar layered casserole that I love--I use yellow squash, zuchinni, spring onions and tomatoes with cheese (what ever is in the cheese drawer) but I use tarragon seasoning with the salt and pepper. As for leftovers, I serve it over pasta and it is great! Thank you for your great videos!!!

My grandma always put cottage cheese between the layers along with the shredded cheese. I loved it. I make it for my family now when the zucchini in my garden is growing like crazy. Yummy!
I love zuchinni onions and tomatoes but never thought about making it a casserole. Thank you Tipper that's is going to be so yummy.

Thank you! You could even put bacon crumbles in this, or diced chicken. Maybe even shrimp?? Then you would have a dinner in one dish with a slice of bread on the side, or a roll for your starch. This is a really wonderful recipe! I saw someone else mention in her comment she thought eggplant would be great even. It would be a quick dinner for a busy night for sure! I hope your day went well today, Tipper! I was able to get a good handful of housework done today. Everyday is better and better! Thank you for your prayers still. I know they are what is carrying me forward so quickly! Donna. : )

That looks good! We've been making a casserole with zucchini, tomatoes, bell pepper, cheese, rice, chicken broth and lots of basil for many years.

My mum made something similar when I was a child.in the sixties, we called it a tomato and onion bake , mum would have it topped with breadcrumbs and sometimes it would include green beans, but ours didn’t have cheese in it. Most often in the cooler months and with a roast meat or chicken or sausages. It brings back nice memories. This was in Australia.

This looks so yummy! I prefer Gouda over mozzarella anyway so I might just go ahead and use that. I do like mozzarella though. I wonder if a drizzle of balsamic would be good on that too. Its such a great use for those really big zucchini too.

When my garden is in, I enjoy meals of just fresh vegetables. The first meal from the garden is the one that I wait all winter for
I love that the veggies a crisp tender! I've been making parm tomatoes, with panko crumbs, basil, and olive oil for years l. Can't wait to try it with the addition of zucchini and onions! Yum! Thank you for sharing and giving credit to your Blind Pig and the Acorn reader, Tipper. So many don't.
Not only do I not like Winter because of the temperature, which makes all my little aches and pains worse...it's the inability to run out back and grab something to eat from the garden. If I'm cooking something and need a pepper or a tomato I don't have to run to town to buy one. At least Winter keeps the bugs in check and I get to provide food and water to the birds and squirrels. That garden casserole looks GREAT!!!! Everyone please prepare for food shortages. It looks like even if food is available it won't be affordable. Tipper...do you have a simple bread recipe?

My Grandma used to make this in Summer at end of garden. She called it layed supper and layered hamburger in it too

I make a version of this but add squash and I do use oregano in mine. So yummy!! I love all of your cooking videos Tipper. It’s the highlight of my day when I see a new one come out. Thanks for all your tips and recipes. It reminds me so much of the things we ate as kids at my grandma’s house💕

I have made this for years with the addiction of some sliced potatoes, lots of cheese and no crumbs. I typically season with garlic powder, salt, oregano, and lots of black pepper. This recipe was called "Summer Gratin". It is a great way to use up those giant baseball bat zucchini that you find hiding in the garden. Two or three options to add... Sliced egg plant, green pepper rings and mushrooms work well. You can also use grated potato for the top... Instead of bread crumbs. Yum!
My mom used to make something similar to this with yellow and green squash, onions, cheese, milk and crushed potato chips.
Looks delicious, Save me plate, just put it in the fridge. It should only take me about 2 1/2 hours to get there. I'll just heat it back up when I get there. Leave the porch light on . lol.

A friend of mine gave me this recipe a long time ago. She didn’t put bread crumbs on top, but I’m going to do that next time. I usually put Italian seasoning on mine. I love it with soup beans.
Thanks for sharing this idea. I put leftover black beans and white rice in mine with squash, tomato, onion, okra, and cheese. I never thought of a layered casserole with the veggies. I just stir fried mine. I plan on doing this more often.

This makes me think of a gratin. I have made potatoes au gratin pretty regularly for family gatherings. They are usually spread out in a shallow dish, but the layering is the same. I love the idea of making it with a variety of vegetables. Thanks for sharing. I cannot wait to make it.
Could use stuffing to start off. Use it in each layer and to top it off. Don't really need to add seasonings since stuffing is seasoned. Do it this way if canned tomatoes are used since they have a lot of liquid. Now I'm hungry!lol

I save my ruffle potatoe chips little pieces for toping in the freezer !!! But this is awesome looking I make my Mothers hot dish like this only it is fried and then baked with paremsan cheese on top of it !!!

I make a similar one too. It’s a Greek casserole called Biram. Potatoes, onions, garlic, green pepper, zucchini and yellow squash with tomatoes on the top. It cooks for about an hour or more. Melting tender. It’s so good.
Good food Good eating and Good people! Hard to beat! I guess you heard that Queen Elizabeth died today well my mama shared her birthday however I lost her 11 years ago at 85 years old. Mama loved to cook and was a great cook. Like you! She introduced me to the kitchen and I have always enjoyed cooking. I have heard you talk about how you like recipes and how some people don't I am one who doesn't need one but my wife really wants one! Funny thing how life goes.I enjoyed watching you fix the casserole today and I thank you for the memories Tipper!

This looks like absolutely yummy I have mixed this up in a skillet and in a saucepan but never thought of doing it as a casserole with some crumbs on the top and stuff looking really good
my mom made that and I loved it. I make it too, but one thing I do that my momma didn't do, is I salt the tomato and let the juice drain out before I put it in the casserole, that way it doesn't end up watery from the 'mater juice YUM. Great share!

Tipper your post had me craving this, so I made some tonight. Right before I put the cheese topping on it, I thought, "I wonder how this would be with mushrooms?" So I topped it with mushroom slices and then the cheese and it was to die for. OH MY! :)
My parents were born and raised in the hills of east Tennessee, and Mama made a version of this casserole. Your videos always bring me happy memories.
First I thought that dish was a tetrazzini but thats made with noodles n meat n veggies what it is called is Layered Vegetable Terrine. Expensive restaurants serve it at 10 or more bucks a serving yay Tipper !!! Thank you for sharing

Sounds like a Southern version of Ratatouille!! Oh wow I’ve got to try that! I’m making some later this week!! Traditional Ratatouille is zucchini, yellow squash, onion, eggplant, tomato, mozzarella, covered with tomato sauce there’s something so satisfying about veggies and cheese baked together!! Yum! I started making baked ratatouille after the movie came out when my daughter was little, she loved it and we had it often. S

I make something similar to this in a shallow baking dish. I add a little olive oil on the bottom of the pan and on each layer instead of using butter. I mix potato chips (instead of crackers) with sour cream. I put this on top, add the cheddar cheese, (yeah, I know, not very healthy!) and bake! Sometimes I sprinkle Parmesan cheese on top too. It is sooo good. It's one of my favorite recipes!

I had a similar one a friend made in Paris. It has potatoes in it also along with the tomatoes, onions, zuchini and 3 cheeses. It was layered like that with a little butter here and there. No breadcrumbs but had cheese on top. The potatoes were sliced very thin rounds and were just another layer. She served it with fresh cucumbers and oil and vinegar. I have pre-boiled the potatoes a little bit at times. She did not. Of course we had a great crusty bread with it. So good. I want to make this soon. I am really craving vegetables. I will try your recipe without potatoes and add breadcrumbs next time. Thanks.

Mmm Mmm. Reminds me of my Grandmas fried and breaded zucchini or summer squash. Now Im wish for tomato sandwiches too.
those tomatoes look sooooo good. I've not seen any good home grown ones this year around where we live.
I hardly eat meat anymore....this would be right up my alley! Gosh, it looks so good!

Wonderful. I make this in one of my cast iron skillets. Fry up all the veggies, add the cheese and crackers and then bake. God Bless and stay safe.

I can zucchini, onions, and tomatoes, oregano, garlic, every year. In the winter just open a jar and put over rice sprinkled with any cheese you like.

This casserole is brand new to me, Tipper, but I'm sure I'd enjoy it. Like Matt, I grew up eating and enjoying leftovers, and still enjoy them. There are some things that get better the more times they're warmed up.

Tipper, a neighbor found a recipe like this years ago and, she shared this with me and, another neighbor. We made this quite often since. I tend to think of it as a tomato pie without the crust and the mayonnaise. I just wasn’t crazy about the tomato pie, I like this fresh vegetable casserole much better. I love making this with shredded Swiss and, havarti cheese. Thank you for sharing and God bless!

I completely forgot about Havarti since I've been living in another country!! I love Havarti. When I first came here, they didn't have cheddar, but now, it's sold here.
When you get old and geezerish a lot flies out the window and off into the sunset. Sounds good and we go through squashes of all kinds by the ton but maters was riding on something that went out a long time ago. Taters barely got back in under the radar but peppers and eggplant went even further out. Sure am glad the eggplant wasn't dead chicken. Blessings 4 ALL yall!.
My Kentucky cousin taught me this recipe years ago, & I love it. We use summer squash sometimes in place of the zucchini. She didn't use the crumb topping, though, so I'm going to add that.
