    ** : You can eat good quality pork raw. It's really bad habit to overcook it because it gives the meat a horrible texture and the flavours are not so great.

    @@TheEnneite It's not about the quality. In fact chances are, industrial produced pork has less a chance of being fed any type of meat than "farm fresh" pork. It comes down to trusting the source on if the pigs were ever fed meat and I'm not one to trust. So I'll either cook it well or just avoid it all together. You do you shouldn't encourage others with just the simplistic description of "good quality pork."

    @@recoil53 Because prettier food really does taste better. If you're going to spend all that time prepping ingredients to make the piece of meat taste better, you should be spending the few extra seconds needed to make it look better to improve the flavor as well. We truly do eat with our eyes. And our noses for that matter.

    It's been a long, long time since I had a boss, and actually my direct boss was a good guy I'd totally hang out with any time. It was his boss that was super awkward to be around. These days I'm my own boss, so no second-hand anxiety for me.

    You’re telling me the former editor in chief of Bon Appetit 1. Didn’t know why to crush garlic 2. Doesn’t understand why to salt meat directly 3. Thinks dried spices are indicative of decade 4. Rolled his eyes at food plating and made fun of Molly’s “rustic” setup, when he edits a CoOKiNG MaGAzInE?? Hindsight being 20/20 what the heck did this guy do to get his position, and how did he have the audacity to underpay part of his staff who could clearly cook/research/edit/teach circles around him?? The fact that Molly literally developed the recipe and this bozo walks in, reads her paper, tells her to change some things because of “””his vision””” acts for the whole video like he’s the expert while making little comments like “oh I don’t know why this happens but sure”, then dips out once the fun visual part is over, is such a laugh are you kidddding?     @@jessicabraud3307 He resigned because he did brownface many years ago, the picture recently surfaced. After that happened, it came out that a lot of racist policies were happening at BA. Sohla El-Waylly was never paid for video appearances. Also Christina Chaey was never given a raise or bonus for 3 years, and was also never paid for video appearances. At the same time, Brad, Claire and other white test kitchen staff DID get bonuses and were paid for video appearances.

    Matthew Torres as a Latino and a Cuban ( aka a fellow Caribbean) I found what he did very offensive. The comments on the Instagram post were things like “ I could hardly recognize you, I was scared for my life, good job”. Like “puerto rican” means “some scary thug”.     There's nothing subtle about Rapo, he tried to flex all through the video: "haven't been in a video in a while, huh?" Rapo - Yeah, well I've been working with the tv side of things... aka the internet crowd never meshed with him. "how about we not call them medallions?"     It's beautiful how knowledgeable Molly is about cooking techniques, usages, and verbage despite not going to culinary school. She is truly amazing to watch in her element. I also love how playful and mouthy she can be behind the scenes, but in her own videos, while she still is those, she's also extremely technical in her instructions and actually shows/tells/explains what she's doing so that we might learn as well. Also, her schooling Adam is a great perk. ;)

    I think Molly is an incredible chef, but I want to praise Adam as well just for having a willingness to be curious about everything. And, even though he is technically "boss man", he seems to realize and acknowledge the skill and knowledge of the other employees of BA. But also again, Molly is such a good chef!

    I agree with Andy, it's overcooked. They cooked it to an internal temp of 145 which is medium, the residual heat probably brought it up to medium well. In a developed country like America, you don't have to worry about medium rare pork.

    This has become one of my family's staple meals. It's our favorite thing I make and when I make it everyone wants to come over for dinner or be sent leftovers bc It's so good I make ALOT of it. In fact I made it this year for me and my boyfriend on valentines day and my mother was extremely jealous. Thank you BA you're reliable for some of the best recipes and cooking knowledge.
