Join Carla Music in the Bon Appétit Test Kitchen as she makes baked eggs in tomato. The trick is getting the eggs cooked so that the whites are set and the yolks are still jammy-starting with room temperature eggs is key, so soak them in hot water for a few minutes if they're cold from the fridge.

I don't know what shashuka is but, we do this exact same recipe but instead of eggs, we use fish, chicken or beef. It's usually a recipe for when we have some leftovers and just use that.

I made this for dinner tonight, it was fabulous. Used those little packets of red chili flakes from dominoes and an obscene amount of garlic. I could eat this all the time.

Hassan Qudsi it’s because they usually more fresh. When you buy the chili flakes at the store it’s left on the shelf for a while and then brought home to be left on your shelf at home too. The packets are much better agreed

Little known fact - salt actually has nothing to do with blood pressure control. The osmotic pressure idea doesn't actually apply to humans! Old myth. You'd have to be eating cups of salt a day with very little water to get any toxic effects from hypernatremia.

Bethany Limbaugh they changed the name of the video from Shakshouka to Eggs in Tomato, as the recipe was a derivative of Shakshouka. Shakshouka has more spices in it, but Carla specifically made Eggs in Purgatory. It was an error on the uploading side.

In Turkey we call it Menemen and I loved it as a Kid and still love it. It was the only thing my father could cook😂. What we like to ad is sucuk (which is a spicy sausage) and then ad on top cheese. Some people also like to ad sweet chilli and onions. Thats the nice thing about it, you can do it as you want and like🥰. I loved how Carla called it pugatory, she is such a bundle of Joy 😁

I'm from Tunisia, north africa, origin place of shakshuka, that's not shakshuka, it's Ojja, shakshuka means "mix" and it's basically Ojja (tomato sauce with eggs) with potatoes, green pepper and onion chunks or cubes, ask someone from where that dish is cooked everyday, it's a north african (arabic) name as well, it's also made in Israel I think since we share lots of classic dishes like that and Molokhia.

If you put the garlic and chilli in a cold pan on low medium heat with the oil you get maximum extraction and a deeper softer heat from the chili flakes.

This whole episode was just fantastic; had me laughing the entire way through
I thought this was a subpar thought through episode...until I opened my bare fridge on a Sunday and saw all I had left at the end of the week were these ingredients to whip together and stay in my pajamas. I will never doubt Carla again.
