Pantry-Friendly Eggs in Purgatory
Typically, eggs in purgatory are eggs poached in a spicy tomato sauce. The method, which resembles shakshuka, will work with any pan sauce you feel like throwing together, as long as there’s enough liquid to make sure things get steamy. For a weeknight dinner, a can of beans adds protein, fiber, and creaminess, and the parsley salad is not only a resourceful way to use up herbs, but also adds some nice cold/hot, fresh/saucy contrast to the dish. If substituting harissa for the tomato paste, omit the crushed red pepper.

I made this dish tonight and it was excellent, even though my eggs were closer to deviled than runny. I added some pepitas, too, and loved the texture contrast. I'm going to try turning the leftovers into a hash for breakfast tomorrow.

I sometimes like to binge on these kind of videos (started watching her since B.A. & fell in love) and it always amazes me how little salt I'm used to put in food, I'm embarassed that I feel like I'm overdoing it while I've JUST used a pinch 🙈

yumm i love this! i've made a version of eggs in purgatory/shakshouka with harissa, canned tomato & chopped up jar roasted red pepper. definitely my pantry night meal. will 100% try this topping next time.

i used to work with this gal who absolutely hated the chickens her dad raised. she had to help take care of them and apparently they were extremely disagreeable. her favorite day was the day every year when it was time to butcher them all, and her revenge was sweet.

I've been buying good eggs lately. They're still pretty cheap here in Australia. You can get supermarket brand free range for like $5.50 a dozen and the gourmet ones for $7.50 aud.

Every time I'm a spicy lady, I lose the egg gamble and inevitably find the one in a thousand bad egg in my custard base. Then I'm out of eggs because it took so dang many, and no custard base or eggs. Now I dirty that bowl and the only people judging me is apparently my 55 year old dad who has managed to never have a bad egg in his life. Lucky duck.

My landlord had chickens so I kinda sorta also had them. Their coop was right by window and it sucked so bad lol! So so so loud every morning. Also, I saved them from hawks and raccoons literally countless times in the 3 years I lived there, while several were unable to be saved so that was just a bit traumatic.
Any South Africans here, this looks like it might actually go well with pap. That week before pay day. I’m going to try and report back

You’re so cool. I do disagree on the price of eggs. I say everyone should just pay whatever it cost for farmers market eggs or pasture eggs. And suck it up and pay. Eggs are cheap.

Um, there were no tomatoes in this recipe. Harissa is pepper based.
Perhaps one should do the slightest bit of research before adding livestock of any sort to one's household.
