Carla Makes Sweet Potatoes 3 Ways

Steaming is the fastest and most forgiving cooking method for almost anything, but especially sweet potatoes. The high heat, high moisture atmosphere keeps the potatoes from ever getting fibrous or leathery; in fact, they get plump, fluffy, and pudding-like. There are three fantastic toppings here to choose from: Tahini Butter and Lime; Herby Lentils and Yogurt; and Brown Butter Crispy Seedy Nut Mix (with a fried egg!). I made sure that the adornments can be prepped in less time than it takes to steam a sweet potato-about 30 minutes. All three are vegetarian and lean on pantry items.

    same! I became convinced though when i made Sweet potato + Feta + crunchy roasted nuts + tahini/lemon dressing with lentils one time. You need a lot of acid, crunch, salt and bitterness to bring back the balance from the sweet potato but then when you do it's super nice : D

    I made the tahini butter and the brown butter butter seedy mix with egg this week. I’m not allowed butter so used oil and both were still amazingly delicious. Thanks for rescuing my potentially boring weeknight dinner. ❤❤❤

    I think the first two sweet potato dishes also deserve a nice crispy sunny side up on top. Also, the colours. Super inviting and I love sweet potatoes.

    These are probably the recipes I've made the most since they were first posted on Patreon. My favorite way to cook sweet potatoes! Tahini butter is also good with lemon and a bunch of herbs instead of soy and sesame oil, for a mix-up. It's a really nice side for some white fish, also.

    I love roasted sweet potatoes, and I also use them a lot in soups and stews, but never thought that steaming them whole would work. This week I got smaller sweet potatoes from the market and I steamed a few of them today. It worked! Half an hour on the stove and they were all nice and soft. They’re not as flavourful as roasted, but for a quicker and more economical meal it’s perfect 👍🏻

    At the start of this video I was thinking…there is no way to make a sweet potato taste good. But as always you have balanced the flavors, texture and umami, in your recipes. Thank you for including substitutes for flavors/seasonings. Recently organizing our seasoning cabinet, I really cannot buy another obscure item to be used for one meal.     Another great sweet potato recipe is the japanese sweet potato, cut length wise and cut into wedges, skins on. Season with salt, pepper, avocado oil and S & B curry seasoning (or one that is more savory leaning than sweet). Roasted those till they were soft and they are great as a snack or a side for dinner but it’s the breakfast spin that is chef’s kiss. Cut the slices down further, kind of like American fries/ hash from a diner. Crisped them up in a pan and then cracked in a couple of eggs; salt and pepper served sunny side up. It was the best meal I had all week.

    if you mix the sesame oil into the tahini 1st, then slowly add the thinner/watery ingredients, it comes together much easier.

    For the Tahini Lime Butter, I put the butter in the microwave till it was about 75% melted, then stirred in the rest of the ingredients. It looks too liquid at first, but as it cools it gets a lovely texture. Way easier than all of that "bashing" you were doing. I didn't have any sweet potatoes, but I put it on a roasted Carnival squash and it was to die for!

    I have yet to have a good experience with tahini. It always reads as too bitter for me, I just use sesame oil in its place.
