Onion harvesting in hot climates must be so much simpler, these onions in the video look to be very dry even before being taken from the field but in our climate that just isn't often possible and there is a not insignificant indoor drying stage that is required most years before further processing can happen.

We all know it's still done in back of horse drawn wagon. Horse get fed rotten ones.

In India, they have millions of cheap labour to keep machines out of harvesting onions.

Human labor should not be used as a substitute for machines whenever possible. Having said that, companies that use machines to eliminate human labor should also pay a social cost. People should be allowed to live lives where they contribute to society, yet are not just a cheap substitute for a machine.
