Mixing Cream Cheese Icing the Perfect Amount
Cream Cheese Icing
4 oz (113g) butter, softened but still cool (around 65F/18C)
8 oz (227g) cream cheese, cold
4 c (454g) powdered sugar, sifted
1/2 tsp (3g) fine salt
lemon juice or vanilla extract (optional)
1. Remove the cream cheese from the fridge and cut into small cubes. Let sit out briefly while preparing the rest of the ingredients.
2. Mix the butter on medium speed until smooth.
3. Add half of the powdered sugar and mix until combined.
4. Add the second half of the powdered sugar and the salt and mix until the texture of streusel.
5. With the mixer running, add cubes of cream cheese one at a time.
6. Mix until the icing is smooth and there are no visible clumps of butter or cream cheese.
7. Finish by adding lemon juice or vanilla extract. Add just a little at a time, monitoring the texture of the icing after each addition.

mmp! i never used a mixer and always had great cr. cheese icing. don’t measure the sugar, just add bit by bit till it feels right and tastes good :) i also can add vanilla or one or more of cinnamon, nutmeg, allspice, cloves. 🍎🌱

Hmm… Question: What is the effect of different proportions of butter to cream cheese to sugar? I like to whip air into it. So, that might count as over-mixed, but it’s never runny.

More butter will help it stay together better but might decrease the overall cream cheese flavor

The amount of sugar makes a difference too! My favorite recipe uses a pound of powdered sugar and is super fluffy, but I use less suger it's dense.

I'm from Singapore and if you're in a hot climate like me, whisk your cream cheese first till semi smooth, add in softened butter and whisk till well combined then add your sugar and whisk till the clumps of powdered sugar can't be seen. Do not "mix till fluffy" cause it will turn into soup😂

But if you leave your cream cheese out room temperature, it will draw the water out. You can separate it and re-cool it in the fridge.

Plz for the love of god add more cream cheese. Ik it’s a personal preference but I hate it when ppl barely add cream cheese. It’s called cream cheese icing for a reason. You should be able to taste the cream cheese lol personally I add like a whole block and one stick of butter.
