Miss Phyllis' Homemade Buttermilk Biscuits

Miss Phyllis’ Homemade Buttermilk Biscuits
Prep time: 5 minutes
Cook time: 30 minutes
Ingredients:
1) 4 cups self rising flour
2) 1 heaping teaspoon of baking powder
3) 8 Tablespoons salted butter (1 stick)
4) 1 Tablespoon of vegetable shortening (or nonstick spray)
5) 2 cups of whole buttermilk
Steps:
(preheat oven to 450 degrees)
1) Mix flour and baking powder into a medium sized mixing bowl
2) Incorporate 6 tablespoons of butter into flour mixture until there are no large butter pieces. Set 2 tablespoons aside for later.
- Tip: Set butter aside 20 minutes at room temperature to soften
3) Pour 2 cups of buttermilk into flour/butter mixture and mix together until no dry flour mixture remains
- Tip: Don't overmix/overhandle dough or biscuits may turn out dense
4) Turn out biscuit dough on lightly floured surface and lightly flour top
5) Press out dough until ½ inch thick
- Tip: Don’t “over work” the dough; again, it’ll make the biscuits dense
6) Cut out biscuits to desired size
7) Grease cookie sheet or skillet with shortening or nonstick spray
- Tip: Put into the oven 5 minutes before putting biscuits on--bottoms will be a little crispier
8) Place biscuits on cooking surface and place in 450 degree oven
9) Check biscuits at 15-20 minutes. Brush tops with melted 2 tablespoons of butter set aside earlier.
10) Cook until tops of biscuits are golden brown (approximately 10 more minutes).

    We are a family of 13 and make this all the time. It’s a favorite in our house. She’s made so many things we love. Sometimes when I can’t sleep I replay her videos and realize how many little tips I missed watching the first few times. Thank you for leaving her channel up and we love that you are continuing her channel. I miss her and Mr. Bucky so much.

    I told my daughter once i said i want some cow butter and she looked at me kinda funny and said what? I thought all butter was cow butter and i said well i guess youre right but i mean the old fashioned salted butter..i remember it as a child. I absolutely loved it.

    Your mom taught you well, you did an amazing job on those buiscuts, this is my story my mom always made homemade biscuits ans I tries so hard and so many times to make them as she had, but they always turned out so hard you could break a window with. Them, lol, so finally my papaw gave me the secret of using buttermilk, where I had used regular milk and limited the shortening after this lesson with papaw I became a pro... 😀

    Karen Cancel, I cried through Steven's video making the biscuits and am still crying because I miss Phyllis and Bucky so much. Still hard to believe they are gone and way too soon. I believe Phyllis died from a broken heart missing Bucky and his passing. Love that Stephen is carrying on for his mom. Love him already. ❤❤

    I clicked to see Phyllis making biscuits not someone else. I’m a little off put by the takeover. I haven’t given the videos a true chance so maybe I will soon but I just miss seeing Phyllis is all.

    It is my understanding that the money from this channel goes to a charity chosen by Phyllis. I don't recall the name of the charity. You can find it in the first video her son did after her passing. The channel continues in Phyllis's honor. This is a very loving thing that the son and his family are doing.

Phyllis knowing she was sick probably made arrangements with her family to continue the channel as best as they can. It took a long time and a lot of work for Phyllis to get this channel to where it was when she left this world.

    I also have to make a confession.... I saw the notification from KZread pop up with the photo of the bisquites next to your mom's name and photo, and I fell out and lost my realistic senses.. I truly instantly believed it was Phyllis posting the bisquits and oh my god, I saw you, I snapped back, it felt so surreal... I have to tell you this was the first video of recipe that truly put the reality into full. And while watching I thought of your mom how proud she would be, was strikingly surprised how calm and natural you are on your first video making your mom's biquits, and another instant thought came to my mind... you were natural and comfortable because you were making those biquits out of love and pride for your mom and it was making you feel like it did for me the first time I made my grandmother easter pies after she passed away. I remembered all the good things and being in the kitchen and things like that and it really gave a true peacefulness just making one of her recipes as if she was still right there in the kitchen making them herself. I bet you that you were feeling the same way that Phyllis was right there making them herself. I will surely be looking forward to seeing more from you. You have started officially a brand new chapter in the life of the famous Stokes family. Much much love to you and thanks so much Steven for this. It means so much to me and so many others I am sure.

    :) last Sunday I listened to your moms buttermilk biscuit video as I was driving toward Hobbs, NM... I was amazed to hear her recipe for homemade Whole Milk Butermilk; take whole milk and add sour cream... I actually called a friend of mine who is very partial to buttermilk and cornbread to share with her that interesting trick... This friend im speaking of actually has written some cookbooks... Her daughter, who had a baking shop in Edmond, OK some years ago, answered and I asked her if she ever made homemade Buttermilk, she said, that she used a little vinegar, I then told her what Phyllis said about the sour cream... then I told her mom (the recipe book person), she had never heard of that... we are going to try it. Here is the interesting part... I get to Hobbs, NM after an 8 hour drive from OKC... I go into the truck stop and asked for a couple of pieces of their meatloaf for dinner... the lady behind the counter INSISTED FERVENTLTY that I must have a bisquit to go with it (never before has anyone ever been so adamant about me having a biscuit), I told her in amazement, that I am not a biscuit/bread lover BUT because of who and what I had just watched It must be a sign from heaven to at least have a bite in Phyllis' memory... I asked that young lady, "do you believe in the here after", she said, "yes" and I then told her about Ms. Phyllis, and your video about her bisquits, she took a picture of the youtube channel for her reference, and told me that she is interested in culinary arts. I think your mom is smiling down on us and now knows just how many people held her in their hearts, as we now do you, Stephen. Keep on keepin on, my best to you and your family!

    This is so exciting. I'm impressed young man! I'm glad your mom taught you how to feel comfortable in the kitchen. I taught my son how to cook, scrub bathrooms, do laundry, vacuuming and other household chores. Of course after he got married he pretended not to know how to do anything. They had invited my husband and I for dinner when a green bean casserole needed to be made. I said, Mark can do it. My daughter in law said, Oh no, he doesn't know how. I said sure he does then mentioned everything I had taught him. She yelled, MARK, you told me you didn't know how to do anything! Everyone started laughter because they had already been married almost 8 years. He played dumb for that long! I'm sure he heard a lot more than that after we left. 😂 I really miss him. He passed away on 8/15/18 from heart problems. He was only 47. It's been difficult but I know I will see him again. I'm definitely going to make this recipe. It's a bit different than mine, which came from my mom too. Thank you for taking the time to do this. I really enjoyed it.

    bleebleeblahblah Thank you so much for your condolences. As far as my mom's buttermilk biscuits, they are actually made with the shortening instead of the butter in the dough. Mine also uses regular flour with 2 baking powder and 1 tsp salt, and of course the tasty buttermilk. We would roll ours out with a rolling pin but patting them out with your hand would save some dishwashing. lol Then we just brushed butter on top when they came out of the oven. They are similar but I think these will be tastier because of the butter. That's why I'm so eager to try these with the butter instead of the shortening. Probably a bit healthier too, who knows? I figure butter has to be healthier than Crisco. 🤔😊 If not, who cares. 🤗😉 Shhhh, don't tell my mom! Have a good evening.
