Making biscuits use to be an everyday thing for southern cooks. Now we can buy frozen biscuits in the grocery store and almost every fast food place has some form of biscuits available as a breakfast menu item. You can make your own biscuits and freeze them quite easily for just pennies a biscuit. Remember its all about good ingredients and technique. A little practice and you'll be a pro.

    This was so hard for me to watch! I think it's finally hit me that this beautiful lady is resting. Like Martha said at John 11:24 ' I know she will rise on the last day' but boy do I miss her now! I'm grateful to be able to return to these videos and continue learning from them! (Wish I had some lard!)

    I save my biscuit scraps, toss them with a little flour, then lightly into a ziploc freezer, be careful not to smoosh them. Freeze and then pull out for dumplings to use in chicken broth or other soups or stews that you like to add dumplings too. So delicious!

    My mother, maternal aunts and grandmother made their biscuits exactly like you did. I am 60 years old and my grandmother died when I was 3. She had 8 daughters between 1905 to 1925 and taught every one of them to make biscuits with lard. There was no Crisco back then. They ate biscuits every morning for breakfast. All of them lived to be pretty old. Problems caused by fat in the body are not always the result of diet alone. There are hereditary problems with fat metabolism and they can die of heart attacks and blocked circulation no matter how little fat they consume in their diets. One of my uncles told me he had some neighbors when he was young who ate lard or butter in most of their veggies and in biscuits and cornbread and lived to be in their mid 90's. People in he south before modern times worked hard on the farm and burned up all the calories they consumed.

    Good grief Phyllis, you are a master in that kitchen. I love that you made literally everything from scratch. Homemade just tastes so much better with out all that added crap they put in processed foods.

    @Phyllis: You'll get a chuckle from this story, my 1st experience with homemade buttermilk biscuits. When i was 17 and just graduated from high school i followed my best friend who had graduated the year before down to Georgia. One day while visiting some folks out in the country, the Matriarch of the family was making supper and i asked if i could help. She said, "Sure, you can make the biscuits." So I began looking through the cupboards. She asked, "What are you looking for?" I answered," I'm looking for the Bisquick Mix." Haha! Little did I know! She was very surprised that at my age I didn't know how to make biscuits and right then and there she whipped out a large bowl, flour and lard and whatever else and made biscuits so quickly! Of course since then I misplaced the know-how. Yes I still have Bisquick Mix in my cupboard. I appreciate this video very much as I really really want to learn this. Thank you so much for sharing!

    @@PYC000 me too Ms Phyllis made this look so easy, but probably only because she'd made that recipe 10,000 times. I always have trouble when I'm supposed to use my hand to just eye-ball an amount, lol. Wow, they sure did look good though, just like Steven said.

    I read an article that says lard is actually more healthy for you than once thought. Its the Crisco that is an imitation of lard that is said to be unhealthy. Everything is being linked back to the way our past generations cooked, our grandmothers used real lard in cooking and they lived long lives.

    Finally! True instruction on how to make biscuits! I just made them, substituted butter for lard, used 1:1 whole wheat to white flour, and they are incredible!!! Mr. Bucky has a valid explanation for his expanding waistline. Thanks Phyllis for sharing...Stu from Macon.

    Making my mouth water. I have to make some now, haven't in several yrs. I love the idea of using the paper towel to put the butter on top. I know pastry brushes aren't the easiest to clean, they always feel greasey.

    Phyllis Stokes. I have to say I love your recipes and your gentle demeanor. Your southern accent is lovely and soothing. Also want to say just today, I ordered leaf lard online so I can make healthier pie crust and biscuits. I’ve tried Crisco for pie crust and it was great but leaf lard is supposed to be even better. I’ve yet to master biscuits, but your tutorial should help me immensely. Thank you for your tremendous effort and all your fabulous recipes !

    I have been craving real buttermilk biscuits like my grandma used to make for so long! I'm half Thai and grew up in the U.S. south but moved to Thailand over 30 years ago. I've search all of Bangkok trying to find southern buttermilk biscuits but I've yet to find them. Scones on the other hand, are plentiful here, but just do not taste the same as buttermilk biscuits. I found your recipe after searching online and made them today. They are delicious and taste like my grandma's! Thank you for sharing your recipe with the world!

    When I was a kid my dad would make these for Sunday morning breakfast with gravy. Most of the time he used sausage, but sometimes he would use cut up balogna. Balogna gravy on biscuits was my favorite.

    I don't eat pork and never cook with Crisco, but feel pretty confident this will be good with butter. Was distressed to find a choice only between fat-free and 2% buttermilk at the store -- and bought the 2% percent (later wishing I had just waited until I found whole buttermilk at another store). Did some research and think it will work out all right now because I had some sour cream -- and mixed some of that in with the buttermilk. So I'm hoping this will all work out well. I just love the way you showed us how to do this. Thank you!

    Thanks for sharing your recipe. Makes me want to make biscuits right now! My husband always loved his grandmother's biscuits. Not long after we married we were visiting her and she showed me how she made biscuits. After she put them in the pan she placed a dab of shortening on top of each biscuit then put them in the oven. I've never seen anyone else do that, but they sure do taste good that way. I make my biscuits like you did in the video with the exception of the dab of shortening on top. Sometimes if I don't want to worry about having leftover bits of dough I shape the dough into a square or rectangle and cut them with a dough divider. They look a little different but taste just the same.

    Just like mother made except she didn't cut them out. She would pinch off some dough and form the biscuit in her hand, which I could never master. I love this way and using the wax paper makes clean up so much easier. Thank you for the video!

    Nancy Glaze My mother and grandmother pinched them off and then rolled them in their hands to make nice neat biscuits that were all the same size. Neither my sister nor I could ever master the "forming them in our hands" either so we both just continue to cut them out.

    if you decide to get a pastry bush get a silicone brush they are a breeze to clean with hot soapy water and rinsing and your good to go

    My mother has always made delicious biscuits that look very much like yours. The only difference I noticed is that you grease your baking pan, whereas, she only sprinkles a little flour on hers. And they never stick. . . so I'm just wondering if you know what difference that would make. For some reason, I've never been able to recreate the biscuits, but I'm definitely going to give it another try after watching your video. I just watched "Our Story" with you and Mr. Bucky and really loved it! I think ya'll are such a wonderful couple. You have a knack for making people feel like we know you. Btw, my husband and I got married the same year you did. We live in MI but I'm from TN. I've always wanted to retire in North or South Carolina and you've reminded me why. Who knows, maybe we'll be able to do just that.:) Thank you for all of your videos. I enjoy them sooooo much!! May God bless you always!

    I use my Mom's recipe...similar, but we use cold butter in place of lard, and cold buttermilk. We also pinch the dough and form into size we like. When baked, all that butter is melting into the bisquits...so, so yummy. Having said that, my family in Georgia, made them just like you. My Mom's recipe came from my grandmother, and I'm fairly sure her mother taught her.

    +Wendy Karcher Unbleached...not necessarily...it depends on what your palate likes and there are chemicals but even unbleached flour has chemicals in it...you have to check the labels.. :)

    Lard is fat from a pig, so I won't use that, but I have been amazed at how well refined coconut oil, (I use organic), can replace butter in recipes, so I'll bet it will work well here as well to replace Crisco or lard.

    I have never frozen these biscuits mainly because it would take too long to cook them when taken out of the freezer. You could give it a try and see if it works out for you.

    Biscuits is one something that I could never make. Mine were like biscuit in the middle but the top and bottom were like pie crust. So for me its them things in a tube that you smack on the counter.

    I just love your knowledge about baking and especially southern baking. Please help me with my biscuit baking question. Why do we have to use ice cold butter when making biscuits, but if we use lard or shortening, its used room temperature. I think butter or lard or shortening should all be used the same way, whether its ice cold or room temp. Can you shed any light on this?

    When I make biscuits now instead of using Crisco I use butter shredded so it will soften quickly. I do think butter makes the best tasting biscuits. I think having the butter super cold is more to do with making pie crust than making biscuits. You can even use vegetable oil to make biscuits and they will still turn out tasting go. One of the keys to making good biscuits is to not over work the flour.

    Can you cut out the biscuits and freeze them before cooking , like the frozen ones in the store ? And if so , is there anything specific to do or just pop them in freezer ?

    Never tried them like this but I do think freezing them before cooking would work just like those you can buy in the store. I would just pop them in the freezer. My sister use to cook them until just before they start turning brown and then freeze them - this takes less time when you want to finish cooking them before a meal.

    Phyllis these look delicious! I wanted to ask you if you have ever used coconut oil to make biscuits? I have a huge tub of coconut oil/lard and don't know what to do with it besides sautéing. Is this stupid to ask? 🤷‍♀️🤔😀

    I have thought about using coconut oil to make biscuits but every time I decide I'm going to do it I change my mind. I have made pie crust using coconut oil and they turned out pretty good.

    does lard impart any porky taste? I know if you use beef tallow, it imparts a beefy taste.

    Never noticed the biscuits made with lard having any porky taste at all. I've always bought the lard at the grocery store in those small containers. It does change the taste of the biscuits for the better I think. Now it seems lard is much better for your health than shortening that is hydrogenated. Hope this answers your question.

    Ms. Phyllis your biscuits are beautiful. I can tell they are light. Mine are pretty, light but fall apart while I am eating it. What am I doing wrong? My Mama passed away @64 but she could make the prettiest, light no delicious biscuits. I never have been able to make her biscuits. Thanks for all the great video's!

    Not sure why yours fall apart but I do think the protein in the buttermilk helps hold them together, this is just a guess.

    I've had good luck with kneading the dough a little bit more (not too much more) which makes them less crumbly. If you use a lot of shortening it can make them crumbly as well. I like them kind of crumbly in general but when I want them for sandwiches I'll knead the dough a bit more and they seem to hold together better.

    I have never frozen them before they are baked. It should work since you can buy frozen biscuits.

    Ms. Phyllis, I wanted to ask if you’ve ever made biscuits with an egg mixed onto your butter milk? I have seen 1, maybe 2 videos that have done this. I never have and my mother never did, but I wondered what you thought of it...??

    Never heard of adding an egg to buttermilk when making biscuits. I do add an egg yolk to a little water sometimes when making a pie crust.

    Never had an issue with making biscuits until we moved and I had to readjust to a electric oven .....can't stand them... but I think I have figured it out by baking at 475 for 15min, except that I like a crunchy flaky bottom without over browning the top. I moved the rack down from the top to the next level....its better but not all the biscuits toward the center of the pan get their bottoms crunchy. Any clues?

    Ok, today, I used my 40yr old cast iron skillet preheated 5 min.....second rack from bottom in electric oven at 475 for 14 min...a home run with a perfect crunchy bottom. Another batch was just as good in cast iron skillet not preheated but cooked at 450 for 20 min.

    This morning we had 4 of the biscuits that I froze a month ago and I must have did them right because they were OMG so so good. I've never been able to freeze biscuits and have them be just as good as when first made. To reheat I used my oven since I don't have a toaster oven. Wow! The Angel biscuits were a hit also. Thx you.

    I have never tried freezing biscuit dough. I think that would be possible.

    +Phyllis Stokes Phyllis, I have a different recipe for S.biscuits which does include buttermilk but 1tbsp of baking powder and 6 tbsp of cubed very cold sweet butter. I cut them out, put them on a cookie sheet, flash freeze them then wrap them individually in plastic wrap. When needed, I take out how many I need and put them on a cookie sheet w/parchment paper and bake for 15 mins or so at 450! Didn't see you used any baking powder? Is there a link to your recipe?     The flour is self-rising ( it already has the baking powder in it). I didn't put the recipe because it's not an exact recipe.

    Hello, I have a question for you- when I make biscuits (I use self rising flour), they don't rise as much as they should. I try to be quick with the dough. Is it possible that I'm over mixing the dough and it causes them not to rise? I haven't tried your recipe yet, but it's on my list for dinner tonight. :) I've used very similar recipes but haven't had much luck with them rising. Also, do you think I should add a little baking powder to help them rise? They taste good, but they're just not quite right. My oven is pretty old and I don't think it heats evenly. That may be an issue, too. I want to make the "perfect biscuit" but haven't quite gotten there yet! ;) Thanks for sharing your recipe!

    I would definitely use a little extra baking powder even though you are using self-rising flour and try to mix them just as fast as you can - this will help. One other thing are you at a higher altitude? If so that could also be the problem. Even if your oven doesn't heat as hot this should not effect the height of the biscuits they would just have to cook longer.

    WalMart sells a little hanging oven thermometer, my oven is old also and I got one of those to make sure my temp was spot on. Also, what brand of flour are you using? I've found most of us have a favorite, so changing brands might help. Third tip is when you pat the dough out, maybe make it thicker. If you are pressing it to flat before you cut them out, you might get hokey pucks.

    Killing me over here. Store bought lard has trans fat (aka Hydrogenated oil or fat). There is no difference between the two. The "researchers" are assuming you are buying or making lard that does not contain transfat and that you are intelligent to know that hydrogenated oil is transfat. Crisco vegetable shortening has no transfat. It doesn't need it because vegetable oils naturally have a long shelf life unlike LARD. I guess this is why people think we need the FDA but if the FDA actually cared about people they would put cancer advisory warnings on everything containing transfat.

    Sounds as if you've never read the ingredients on a can of Crisco shortening. It's hydrogenated vegetable oil. That's what it is. Lard, on the other hand, has no trans fat. You've got it completely backwards, ReelGuyTv.

    I just looked it up on their websites. Crisco and Armour products are BOTH hydrogenated. Thankfully I use neither.

    That's because they fully hydrogenate their products vs back ten years ago when I stopped using them when they partially hydrogenated. They're still hydrogenated and that's reason enough for me to stay away. It's not normal for lard to have a shelf life of more than just a few days. I know this because I make lard. Now olive oil needs no hydrogenation and has a naturally long shelf life. Don't trust the labels.

    Ms. Phyllis......I've been making biscuits for the past couple of months because I've been staying with my parents.....my grandmother made biscuits in a bread tray and she made biscuits every morning of her life....they were good! My dad told me that my biscuits had too much flour in them!!! I asked him how I was supposed to remedy that....he said...."I don't know but they are too heavy!" So help me please!!!!

    Add more buttermilk and work fast to make a light biscuit. Don't worry about what they look like and you can work faster. The more you work with the flour the heavier it will get.

    Yeah one year THEY say coconut oil is bad for you , which I knew WAS RIDICULOUS and now its proven good for you.Same with lard,now its said Lard has vitamin D,good for you,and other benefits. I stopped listening to "they". They misinform ppl too much ;-) and I still love Phyllis's cooking and recipes!

    Phyllis Crazy question.? Can that dough that your making be used for Dumplings,? By just dopping it into a Pot of hot Chicken Soup.?Or is the Dough recipe for Dumplings a different one.? Just wondering.?

    Some people do use biscuit dough as dumplings, I had a friend who actually used Pillsbury canned biscuits for her dumplings. When I make dumplings I make the dough using more flour and make a stiffer dough so they don't get gummy on the inside. So if you were going to use the biscuit recipe I would just add more flour and that should work fine.

    THEY "SAY" homemade lard is healthier than store bought Lard. I'm not sure what homemade lard is yet though....unless its just bacon fat! The fat from pigs. My mother and Grandmother both used lard in cooking and though I usually dont I do remember seeing containers of bacon fat at home when I was growing up and remember eggs cooked with it were delicious!! My mother never stopped using it! My great Grandmother lived to be 104 yrs old! I dont take what Government Organizations and Doctors say too seriously!
