Microsoft to Modernist Cuisine: One Man's Deep Dive Into Pizza | Amanpour and Company

Nathan Myhrvold spent 14 years ascending the ranks at Microsoft to become the company's first Chief Technology Officer, before leaving the tech world behind to pursue his dream of attending culinary school. He went on to found Modernist Cuisine, a research lab and publishing house exploring the cutting edge of the culinary arts. Myhrvold joins Walter Isaacson to discuss his latest series of books, in which he explores the history and science of one of the world's best-loved dishes: pizza.

    It's probably not a coincidence that 2 of PBS's most popular cooking shows, Americas Test Kitchen and Cooks Country, feature a brief science segment explaining what's going on at the molecular level with food. Surely inspired by Modernist Cuisine.

    Quite an interesting story teller, I might have to check out his book at the library. I'm glad he left Microsoft to pursue his passion (food).

    Pizza has a crust (or raised edge) is because, in the Middle Ages, dinner plates were commonly made from bread.

    Oh wow this obscenely rich white guy quits his highly paid job (with HUGE stock options!) to risk it all making pizza...how inspiring that even rich white guys can follow their dreams 😂
