高筋麵粉270克(2+1/4杯)
牛奶160克(3/4杯+2小勺)
酵母3克(3/4小勺)
蛋白1個約30克
白糖30克(2大勺)
鹽3克(1/2小勺)
無鹽黃油30克(2大勺)
餡料:
椰蓉70克(10大勺)
蛋黃1個
白糖25克(5小勺)
全蛋液45克(3大勺)
無鹽黃油40克(8小勺)
烘烤:
烤箱預熱15分鐘
180°C
32~35分鐘
Recipe :
1cup=200ml
Bread Flour 270g(2+1/4cup)
Milk 160g(3/4cup+2 tsp)
Instant Yeast 3g(3/4 tsp)
Egg white ✖️1 (30g+-)
Sugar 30g(2 tbsp)
Salt 3g(1/2 tsp)
Unsalted butter 30g(2 tbsp)
Filling :
Chopped Coconut 70g(10 tbsp)
Yolk ✖️ 1
Sugar 25g(5 tsp)
Egg liquid 45g(3 tbsp)
Unsalted butter 40g(8 tsp)
Baking:
Preheat oven for 15 minutes
180°C
32-35 minutes

I have a couple of questions regarding the butter for the filling, should it be room temperature or should it be melted. It seems to be melted butter in the video. Should the filling be kept in the fridge until the dough is ready for the filling? Thank you in advance for your help

Hello, thank you for your comment.I’m so glad to share with you.the butter used in the filling in my video is melted butter. After the filling is made, you can cover the filling with plastic wrap and leave it at room temperature, because we need the filling to be appropriately soft so that it is easy to spread the filling on the dough. If you put it in the refrigerator, it will be hard and difficult to spread evenly.
Thanks for sharing yummy bread n always follow u on KZread, my family love the bread that I learned from u, I have one question to ask you, After taking the bread out of the oven, do I need to cover it with a cloth when leaving it at room temperature to cool naturally? How can I prevent the surface of the bread from being too dry?

👍🤗🌹💞Thank you very much for your love! Ali is very happy to share these delicious recipes with you. You are very thoughtful and right. After the bread is out of the oven, pour it out of the baking tray and put it on the grill to let the heat dissipate. After about 5 to 10 minutes, when the bread is not too hot, you can cover it with a piece of cotton cloth. This allows air to ventilate and prevents the bread from losing moisture. However, it is recommended to put it on the grill during this process to avoid the bread being placed on the board or the bottom of the baking tray without heat dissipation and accumulating a lot of moisture.

您好,餡料裡的黃油可以用用牛油果油替換的,不建議橄欖油,因為橄欖油味道比較獨特,會影響椰蓉的香氣。🤗💞🌹

您好,椰蓉我用的无糖椰蓉,比较干的那种。如果用有糖椰蓉可以减糖或者不放糖。如果有糖椰蓉比较湿润,可以适当减少蛋液以防馅料太稀。😘💞🌹
椰蓉可以換成別的嗎?

老師你好, 想要請問一下, 為什麼吐司切的時候容易掉屑屑。

@user-ni7gi1yl7l 你好,吐司切的時候一定要充分放涼,避免切開會讓熱組織黏連在一起,烤熟放涼後麵包內部組織不會黏連。 第二如果麵包屑多,可能需要換一把麵包刀。我目前用的日本牌子的,麵包切出來基本沒有碎屑麵包渣。以前用其他比較普通的麵包刀也很容易切的時候有麵包碎屑的。😀
