Mexican steak tacos

Ingredients for pickled onions:
1 large red onion
3 cloves of garlic , sliced
1 cup boiling water
1/4 cup white vinegar
1/4 cup red wine vinegar
2 tablespoon sugar
1 and 1/2 teaspoon salt
1/2 teaspoon peppercorns
1/2 teaspoon crushed red peppers
For the steak:
750 - 900 g skirt steak (about 1.7-2 lb)
2 teaspoon smoked paprika
1 tablespoon light brown sugar
1 tablespoon coarse kosher salt
1 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon cayenne pepper
2 tablespoon lime juice (1 large lime)
1 tablespoon vegetable oil
To assemble the tacos:
Tortilla bread (I prefer white corn tortilla)
Jalapenos
Pickled red onions
lime
Cilantro
Tips:
The grilling time will vary based on the thickness of the steak.. If you have a thermometer, below you will find the internal temperatures for beef doneness….. take the steak off the heat 1-2 degrees Celsius/ 3-4 F lower than the desired temperature as the steak will continue to cook while resting.
If you prefer the steak to be more on the well done side, then cook the steak over medium heat, flipping it every two minutes until cooked to your likeness.
