I grew up in a trailer park in salina ks and there were some Mexicans that had a hand dug pit that they used to make barbacoa. It was so good. Best neighbors and we didn't even speak the same languages.

fuck man, we always cook this at Christmas or New Years and exactly like that in a hole best tasting lamb ever the meat comes out so tender. I’ve always been embarrassed to explain the dish because it kinda sounds ridiculous to say we cook our food in a hole in the dirt.

I use to help my dad do this back in the 90s for the quinceañeras. He raised the goats in our backyard and everybody from his hometown would get the food for their party from us. I’m more of a barbecue kind of guy, but I don’t do too bad making barbacoa myself.

My dad's side is very traditional when it comes to barbacoa and ladies and gentlemen if you never had this or the broth you're in for a treat of a lifetime. This taste way better than your regular carne asada tacos the labor put into this is very intense it requires more than 1 maybe 4 people. If you ever have the chance to try this please it will be the best tacos you'll eve eat I promise you!
