Ingredients:
For the cake layers:
7 tablespoons (100g) butter
4 tablespoons (80g) Honey
1 teaspoon (5g) baking soda
3½ cups (450g) flour
3 eggs
3/4 cup (150g) Sugar
For the cream:
2¼ cups (515g) sour cream
1 cup (240ml) Heavy cream
1½ cups (190g) Powdered sugar
1 teaspoon vanilla extract
directions:
1. Preheat oven to 350F (175C).
2. In a heat proof bowl beat eggs with sugar until light and fluffy add butter and honey. Set the bowl over a bain-marie (double boiler). Stir until butter is completely melted and sugar is dissolved.
3. Add baking soda to the honey and butter mixture and whisk. Gradually add flour and mix with a wooden spoon until dough forms.
4. Knead the dough on a lightly floured surface. Divide into 8 equal pieces. Shape each piece into balls. Roll each piece into very thin layer, trim the rolled dough using a 7-Inch (18 cm) cake ring/cake pan.
5. Pierce each layer with a fork. Bake for 7-8 minutes or until golden. To save time, while baking one tray, roll out other dough pieces. Bake the leftover dough as well (it may take less time), let cool, then process baked leftovers into fine crumbs.
6. Make the cream: in a large place bowl heavy cream, vanilla extract and powdered sugar. Beat to medium-stiff peaks. Fold whipped cream into the sour cream until smooth.
7. Once the cake layers are cooled you can assemble the cake. Spread about 3 tablespoons of cream on one layer, Stack the second layer on top and repeat until you have 8 layers. Spread extra cream on top and sides. Spread reserved cake crumbs on top and sides of the cake.
8. Refrigerate the cake overnight.
Notes:
* To reduce time, you can bake few layers at the time. But only on one baking tray.

I made this for my new to be daughter in law for xmas and totally won her and her family over. Hands down best cake I ever made. I wish I could post pictures. Thank you for helping me feel accomplished even if it did take ages it was so worth it.

We've been using this recipe in our family for years. A little heads up, if you add chopped walnuts into the cream the whole cake would be much tastier

Hi I would love to make this cake... Since u made this many times.. Does the cake layers soften up the next day when serving.? ... I would love to know because I don't want to make something and the layers remain dry and hard... Thank u ❤️🙏

I made this a couple of years ago. Just like your recipe. It was a giant cake! I drizzled honey from our bees on it when serving. Wishing I had an occasion to make it again. Fantastic!

I manged to bake 4 layers at once in a normal size oven! Thats 4 times less time :) The cake is very good!
I’ve tried this recipe multiple times (with a few tweaks in the ingredients) and family loved it every time! Maybe I should also do a video 👀

Nothing major, but I usually cut the sugar out and add a little more honey instead and for the cream, I use condensed milk instead of the sour cream 😊

The one in the video is actually pretty bad the layers are dry because there is not enough cream, you have to let the cream to soak in the layers and have to use a lot of it. This way the Cake gets so soft that you can bite it with your lips. Its perfectly done if its so creamy that you can't tell the difference between bread and cream, it has to stick in your mouth.

I made this and for anyone wondering it’s really good. I’ve tried store bought ones and those are soo good and this one surprisingly tasted a lot like it. This and Наполеон are two of my favorite cakes.

Wow, an incredibly tasty cake, but it does take quite a lot of time to create! I love the idea of reusing the leftover dough... Very economical and brings more blessing to the food table 🙏

I baked the leftovers and left them to cool down. Then I went to my room. When I returned, my sister was eating the last piece of them.

@@mariamtamer821 its hard for me to describe how it tasted but the honey and sourcream are most dominant, and work together perfectly. In my opinion its totaly worth it, im definitely going to make it again and serve it to others proudly and with convidence they will like it too. Its one of if not the best result i got from baking so far.

@@retrorammdd Oh okay thank youu. Other recipes melted the sugar and honey with the butter and added vanilla extract in the dough mixture, but this recipe doesn't include that. So whats best to do?

@@mariamtamer821 funny you ask because to be honest i didnt use the double boiler methode. I added the butter, sugar and honey to a saucepan and slowly heated it on low to medium till sugar was completely desolved, then while still hot i whisked in the eggs 1 by 1 with my standmixer on high. Vanilla i just added to the filling/frosting. I did have to use a little more flour than the recipe called for, not much but some just so my dough was more manageable.

this is one of the best cakes I have ever seen.
Just made this for Thanksgiving dessert and it was a big hit. It's not an overly rich dessert. Quite tasty and visually pretty. Over all it was very easy to make as well. You definitely need to refrigerate it overnight so you get the moist texture of a cake. I'd make this again.

I baked them on cookie sheets 4 at a time using a non-stick spray otherwise they will break apart while trying to get them off the sheets. Also, wait until they are at room temperature before stacking them and spreading the filling on each otherwise they may stick to each other if still warm. We had another slice after 2 days in the fridge and it was even better than the 1st day. Easy recipe to follow

I think so or both, spray the parchment. They are delicate so I wouldn't want that to be an issue.

The reason it tastes better after a while is 'cos layers absorb some moisture from the cream so that reduces dryness and but cream firms up instead. You end up with a softer texture overall. I wouldn't bother whipping the cream at all and just use sour cream anyway.. it does need some sourness to cut through. In fact we used to use cranberries to decorate the top of medovik, 1-2 per slice.

It's really soft and almost melts in your mouth. Especially if you do manage to refrigerate it overnight instead of eating it immediately :)
