Hello.
I'm Boone Bake.
Today, I made a delicious fruit cake based on mango cream.
The cream made by making mango custard cream and mixing whipped cream is a cream that anyone can say is delicious.
I made it with strawberries, kiwi, and mango.
Each can be filled with your favorite fruit.
For the top, I made mango jelly using mango puree.
The mango flavor was strong, and the yellow color was visually pleasing.

● Cup measure standard
237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
(Chocolate is minced, flour is before sieving)
● Vanilla Sponge Cake

3 eggs
75g sugar ( 1/3 cup + 2 tsp )
20 g honey ( 1 Tbsp )
5ml vanilla extract (1 tsp)
30g milk ( 2 Tbsp )
100g cake flour ( 1/2 cup + 3 Tbsp )
30g unsalted butter ( 2 Tbsp )
a pinch of salt
♥ Mango Cream
yolk 2
35g sugar ( 2 Tbsp + 2 tsp )
12 g cornstarch ( 2 Tbsp)
40g mango puree ( 3 Tbsp )
115g (1/2 cup) milk
5 g gelatin ( 1 tsp + 1/2 tsp )
5ml Passion Fruit Liqueur ( 1 tsp )
250g heavy cream ( 1/2 cup + 1 tsp )
15g sugar ( 1 Tbsp + 1/2 tsp )
● Mango Jelly
95g mango puree ( 1/3 cup + 1 Tbsp )
40 g water ( 2 Tbsp + 2 tsp )
4 g gelatin (1 tsp)
20 g sugar ( 1 Tbsp + 2 tsp )
Food coloring (optional)
● Syrup
30 g (2 Tbsp) water
20 g sugar ( 1 Tbsp + 2 tsp )
1/2 tsp Passion Fruit Liqueur
[ or Kirsch 1/2tsp ]

Measure water and sugar
Melt the sugar in the microwave.
Add liqueur and mix.
