@@GodlyDra yeah, they're kind of like spring onions, you chop them up fine and add it on top. You've probably seen it on baked potatoes, it's those green bits. It adds texture and flavor. I guess it depends if you like that taste of onions but it's better than a bland, wallpaper paste taste lol.

He definitely did. Paid promotion videos like this are very specific in what he has to do. Hidden valley I’m sure had an exact number of times he has to say that, as well as number of times he has to show a shot of it being used, total time on screen, etc.

Take it from someone who is terrible at cooking: I always find some way to mess everything up, but mashed potatoes have never failed me. They're literally the easiest thing to make.

Hey, so do you think at some point you could try to make the giant pill bugs from emperor's new groove? I thought maybe the shell could be some kind of crispy, hollowed out bread crust bowl (toasted to get that crunchy shell texture you see when Pacha bites into it) and the filling could be a gelatinous, corn-starchy mixture made from pureed shrimp, so that you could drink it out of a straw like they do in the movie. That's just a suggestion of course, but either way, I thought it'd be a really cool thing to try and make

I grew up on mashed potatoes that had milk added in, so when one day in my college Culinary courses someone asked me how I got my potatoes so creamy and I just responded with, "Uhhh... I added some milk?" The look on his face when he tried it was amusing.
What I learned here: Loaded mashed potatoes is technically a salad. Thank you for that knowledge.

In times of recession or just economic downturn, consumer products and food industries absolutely boom and almost earn too much money to spend it. I bet the advertising and marketing teams and just balling out since they’re probably maxing out their bonuses as a company anyways.
Awesome vid as always. For me as an Aussie, I use Nicola potatoes. Boil for about 20min and make sure you skim off the starch (the foam) while cooking, that's the key! Mash with a masher for about 10 seconds. Add butter first and mash that through. Add salt, lots of pepper and when that's mashed through add a small amount of cream. Mash until smooth but still thick. From there you can add cheese, cooked bacon, onion and garlic to make loaded mash or just serve it as is. Also it's pronounced "Kie-Bosh" ;)
My grandma makes her mashed potatoes with any kind of potato (usually russet), heavily salts the water, drains them, adds 8-160oz sour cream and more salt, and uses an electric hand mixer to quickly mash them. You don’t need butter or pepper in my opinion! You do have to be careful not to over mix though, so sometimes I’ll use Yukon golds instead
For fluffiest possible russets (or any type), don’t mash/rice straight after draining. Instead return them to medium low heat and stir until somewhat drier and they start to become mealy. This serves the dual purpose of reducing their ability to become pasty and also increases their receptiveness to fats and dairy added to them.

My mom used to do this wonderful thing where she added just a pinch of nutmeg to plain ol'mashed potatoes and then with some still unknown to me ingredients, gave it a few minutes in the oven to give it a perfect golden brown crust

great ad, and solid mashed potatoes tips. mine and my son's favorite way to make mashed potatoes is quartered red potatoes, boil 15 minutes but add several chopped cloves of garlic the last minute so they get softened-up nice but still tangy, drain potatoes and garlic and put back in pot, add stick of butter, bunch of red pepper flakes, salt, fresh ground black pepper, big cup milk, smash with forks until still slightly lumpy, then serve with with chopped green onions and grated sharp cheddar. :)
I actually do three baths of cold water with my russet potatoes, one when peeling, then when cutting, then right before I put it on the stove. It helps leech out a lot of the excess starch. It’s especially good if you only have old potatoes since they accumulate a lot if starch with age, that or if you don’t have a ricer like I don’t.

Read somewhere that when you boil in water then drain it you are throwing out the potato flavor. So I tried boiling in a cream butter garlic milk mix instead and mashed them in. Tasted great 👍🏼

That's my main gripe with potato ricers. They are large, a bitch to clean, do one thing only, and the end result is that it ends up like the crap in the box. Live a little and mash it with a masher so you have a few tasty lumps.

The best potatoes are mashed literally only enough to be able to adequately incorporate the milk, butter, salt, pepper and any chosen extras add ins. Box flakes are not mashed potatoes and arguably not real food. I’d rather eat an MRE.

My aunt taught me every time she visited how to make her mash with beef stew. I will never change that recipe but its pretty much exactly what you did with the yukon gold except using rooster potatoes. I might add bacon bits though. That looked really nice.
Can we all agree that the intro music actually hits different? It makes me so happy just deciding to watch a video and then hearing the intro music along with knowing that I'm watching someone make food (which I find very precious)
Aside from pepper and salt I always add some fresh grated Nutmeg. It really enhances the flavour.

YUP! Either roast garlic, or garlic that has been confit-ed (LOL) in clarified butter until completely translucent. Then I add the butter used for the confit. It takes a few hours at ultra-low on my stove, but it's totally worth it.

Love that you use a potato ricer. Surprised you didn't examine some different cooking methods. I bake russets when I'm making large batches during holidays. Cut them in half when they come out of the oven, cut side down in the ricer and away we go. The ricer captures the skins, and then fold in butter, cream, and salt - along with whatever else you dig in your potatoes. I've also tried an ATK recipe where you steam potato chunks, rinsing starch off a couple times during the process. They were good, but I'm not sure it was worth the work. Thanks for the great content.
The midwesterner in me loved all of this. I could vividly imagine the loaded mashed potatoes at some sort of FFA banquet. Hands down, everyone would be talking about that lol.

Dude! That has got to be the best recipe(s) for mashed potato I've ever seen. So over the top it fits my bill straight away.
Can you do a basics episode with pot pies? One type is an Australian pot pie. It has precooked chicken or braised beef short ribs with vegetables in a thick gravy, that is then put inside a pastry shell, but is then topped with cheesy mashed potatoes, and baked.

I don't like blue cheese--it was too strongly tangy even before I found out what it was made of, and after I did I haven't touched it since. Let me either eat my wings unsauced or dip barbecue wings into my ranch in peace, and all you heat fans can enjoy yours with my compliments.

What I love eating is "potatoe salad mash potatoes", which is boiled potatoes mashed with skimmed milk (no butter), then you lightly mix in boiled diced carrot and peas, and raw diced onion and some garlic. Its filling, tastes amazing and packs very few calories.
Watching this while I eat some mashed potatoes made from the powdered stuff and mixed with some garlic salt. It's not nearly as sophisticated, but it's a start and I'm still proud of myself. ❤

You've gotta try making Robuchon pomme puree. The version I learned was Meadowood's take on it and has probably changed a bit as my memory sucks. 2 pounds yukon golds 8oz creme fraiche, 4Tbs olive oil half stick butter, maybe half a cup of cream, rice potatoes, mix with other ingredients, pass through chinoise, pass through Tami, only use a couple tablespoons at a time because it's so rich. Starch doesn't really get overworked and the flavor is insane, double fine straining also makes it insanely silky.

If you use the russet potatoes, soak for 5 minutes in cold water and then drain and rinse them a few minutes until the water runs clear, then boil them. You will rinse away a good amount of starch and less likely to over mix them.
