Man I LOVE this channel. I can't always afford or find the ingredients you use, but you are pretty good about offering other options. You can see Joshua made his homework before doing this video, from the chop sticks for eggs to the orange shirt… Homework or not, this guy is crazy good, I almost never subscribe to a channel because… you know… effort. but I’m an ok cook and there is absolutely nothing I can find wrong about his technique or recipes. Good job.. bucket list item #7 : make one of his recipe… but better!

whats funny is that when fast food restaurants create a new menu item, they have actual gourmet chefs come up with the recipe, and then simplify the components to make the end product as cheap as possible without losing the idea of the dish. so pretty much, josh is basically making what those chain restaurant chefs make lol

I made a keto version of this using miracle rice and a few other ingredient substitutions (butter instead of smoked duck fat, plain soy sauce instead of sweet soy, double fermented soy instead of double aged soy.) It was amazing! Thank you Joshua!

You forgot the all-important rule that a wok with a flat bottom isn't a proper wok, so it doesn't count. Neither does anything coated in teflon or anything that's never been used. You see three woks, I see one.

The combination of fried garlic and raw garlic really makes the recipe. I didn't expect that to work so well but it's so good.
Great recipe! Made it today (used some leftover smoked bacon fat instead of the goose fat) and it was lovely!

Not really the Asian standard. All my Asian relatives make fried rice differently so there really isn't a standard. Besides uncle roger is a Malaysian comedian living in the UK and not a food expert.
When he pulled out the smoker gun I knew I was never attempting this one. We need a Josh Weismann but LAZIER series

My only criticism is that you add eggs to your aromatics and oil. Cook eggs first. separate, re-add eggs after you've incorporated the rice with the oil and aromatics. It will give you rice a much better texture, as well as better infuse all of those great flavours and make the rice glisten (it also helps you actually fry the rice). In this case, you're just letting so much of your efforts be absorbed in to the eggs.

Sambal is very common in California. Chinese and Thai restaurants have it. You can even find it in supermarkets Asian section here.

Why are your headphones not plugged in? 😂😂 Edit: I made this tonight (3/27/21), holy crap it was amazing. The only thing I couldn’t do/have was smoke the duck fat, but I will definitely be trying it in the future! Thank you! Update: 10/23/23- I have made this rice about a dozen times since my original post. Around time #6 I finally invested in a cold smoker. It made ALL the difference. I don’t know how or why I made it without. My dad grows chilis so I always have a supply of them lol. Thank you again!

Finally tried this recipe. Tweaked it a little to include chicken instead of eggs because my partner hates eggs. Most flavorful fried rice I've ever eaten. Galangal is a miracle root.

I strongly agree to Joshua bout Uncle Roger using TOOOOO MUCH MSG.
I used liquid smoke to duck fat and added seared peas and chicken. Tastes Great. Thanks. I also used leaks and onion over scallions walmart does not have. Added serano pepper over fresno and did it add a GREAT BITE!!

Dude when he fry that shallot with the garlic, I swear I could sense the smell even though I'm on the east side of the globe. Mmmmm 🤤👌
you know, this might have been like one of those scary moments when someone goes on the voice or some show like that and sings one of the judges’ songs. it’s a HUGE risk, but they are sometimes rewarded. I think the shirt, being a copy of Uncle Roger’s, was a really cute idea though
from someone who cooks a LOT of rice and fried rice at home, I recommend stirring up the rice in the cooker right after it's finished cooking to separate the grains so that it doesn't cool in the shape of the rice cooker and end up with the big chunks like we see in the video. This also allows the rice to cook more consistently in the wok and get even sauce coating.

If you are using freshly cooked rice for a fried rice, yeah that's happened. But as he let it sit for overnight anyway, the starchy outside of the rice is drying a bit and doesn't clump when you stir fry it, or at least so easy to break

He turned the rice cooker out on a baking sheet, then broke it up into small pieces, THEN refrigerated it. He did not refrigerate it as a rice cooker shaped lump.

I also don't bother spreading mine on a pan, I just break it up and cool it overnight. Maybe he lives in a really humid place, too? So that's why his is more clumpy

Using weight for everything is only more accurate in theory, tbh. Using volume is more accurate when dealing with small amounts and is a lot easier to eyeball measurements. Using weight for small quantities requires a really good quality kitchen scale, so measuring by volume makes more sense unless you're baking or dealing with large quantities of food.

I try to be grateful that my countless food allergies only result in a half hour of congestion. The only time they almost proved deadly was when I got a scratch test on my arms and went into shock.

Disagree. Uncle Roger can’t hold a candle to Mikey Chen, regarding Chinese foods. Uncle Roger’s domain is Fried Rice. And that’s ok.

Uncle roger version of fried rice has simpler version here in malaysia, most of us we called it "buttered fried rice" which consist of just 4 ingredients... Famous among local kids (i think) We just use -- butter, cold rice, eggs and MSG. If uncle roger's fried rice consume 10mins of time, this simpler version can be done in 3,4 mins roughly. Would like to see the but better version of this 😊 Btw, your videos are all great, im subscribing!

Fantastic fried rice Joshua. No cold smoker but I tried to mix some drops of natural hickory liquid smoke (mixed results). Also replacing galanga with ginger easier to find, works. But I'll have to try finding Ganalnga for a more zesty flavour... Anyway I got some shredded ham that would go great with fried rice. When would you say is the best time to drop it in? After the eggs or maybe first thing , before the garlic. Fried rice is pretty forgiving overall so I'll try. Thanks for the vids
In Korea most egg fried rice is just made with vegetable oil although some people add a teaspoon of sesame oil for a more East Asia flavor.

I've been studying fried rice lately and this and some others are soooo different. Go watch the French cooking guy's series on how to make fried rice right now. That's type of fried rice I'm looking for. Something that doesn't take a paste to taste good. With those fried rice it's almost as if it's all about the technique. Also, in my opinion a great fried rice is the ability to infuse the Smokey Wok flavor...
yea that looks great i use a combo of dark soy light soy oyster sauce and sweet soy KM combine them 4 in the right ratio and its fantastic. specally on noodles with stir fry veg and some chikkn.
The fact they showed that he didn’t have his headphones plugged in made me laugh pretty hard
