I've always wanted to try this dish from one of my favorite movies ever: Ratatouille. Turns out there's some rich history associated with it, and I explored 2 versions of the dish in this video.

    A little precision, more than just thyme, you must use "herbes de provences" which often contain a blend savory, marjoram, rosemary, thyme, and oregano. You can add black olives too (without the pit). Something to know is that ratatouille gets even better reheated the day after, or the portion you have frozen in summer and be eaten in winter.

    I love ratatouille, but the regular version. I had a job as a French cook (then later chef) when I was 18 and it was one of the first things I learned to cook. these days I like to grill the vegetables and eat it with fusilli pasta, good olives (usually Kalamatas or oil-cured black olives) and capers.

    Being french and from the south of France where Ratatouille is the local dish, it is just delicious and I'm so glad you like it ! It's the perfect healthy, tasty, easy meal and a lot of us have grown up eating it. Great job !!!(definitely don't hesitate to put more herbs in next time, it usually comes with more than just thyme but that depends on your taste !)

    french guy making ratatouille regularly here. So I usually put white wine in it and almost no tomato. And the traditional way is to put a bouquet garni inside (usually thyme, rosemary and bay leaf) and let it simmer for at least an hour, for the juices to come out

    The thing about the scene with Ego, is that its not about the dish Itself tasting so good it took him to have a hella trip. Its about how Remy could encapsulate the taste of Ego’s childhood that made the ratatouille so special for him. That’s why we dont see chef Skinner have a flashback either, the dish is good, yeah! But not that special for him as it is for Ego. What tastes delicious for me may be whatever for the next person, but its how our mothers and grandmas made the food we loved that puts that dish in a special place 💖

    What I like about it is that it is unashamedly vegan - it is not fake meat and 🧀 spelt with a 'z' because it's not real cheese. It is just good quality vegetables, done well.

    I love dishes like that for exactly that reason. Never been a fan of fake-foods. There are some dishes - mainly one-pot-stuff with lentils or beans - where I only realized late in life, that they are actually vegan - I never noticed before because I never thought about them is such catagories, they are just good old soul-food.

    Yeah, plant based dishes are severely underestimated in many parts of the world. Meat is awesome, especially paired with veggies, don't get me wrong, but not every meal should contain meat. You don't really need it to make a meal tasty, nutricious and filling.

    ​@@mikhael144vegan means absolutely nothing from animals, so no cheese and eggs. Vegetarian usually will eat eggs and dairy products.

    Actually saudade has no direct translation in French. It is a nostalgia, sometimes sadness, longing for something that has existed or never existed even. It is a shame because all my Brazilian friends use saudade all the time and as a French I don't have an equivalent word. Déjà vu, or in English deja vu, is an impression of experiencing again a moment.

    Lovely video and a nice nod to the traditional version. I make this a lot using a recipe from Yankee magazine, which focuses on US New England states' culture. There is a French influence in parts of New England, and people love growing vegetable gardens so ratatouille is a nice local tradition. The Yankee recipe I have has many similarities with your French colleague's recipe, which made me happy to see. And combining with French bread is perfect!

    I made this dish for mothers day back in 2021. Had a hard time trying to find a ring mold though as it wasn't available at Wal-Mart so my dad and I eventually went to this small Asian furniture store and got one from there. It wasn't tall though but it will do.

    Try the layered kind with bread crumbs or thin slices of hard bread in between as well. It sopps up the juices and kind of solidifies it and gives it a bit of umph or something

    I made this but I used bell pepper instead of tomatoes for the layers, and the sauce underneath was just homemade tomato sauce simmered for a few hours. Then at the end, YOU DAB SOME GOAT CHEESE ON TOP on the plate - one of the best things I've ever made, have taken it to many family dinners since and it always gets eaten up. :)

    Dudddeeee i bought garlic some time ago. And it did not have peels. I was so surprised, i thought it was a coincidence but it was actually bred to not have peels. Its called „solo garlic“ and you can buy it in the Jumbo in the netherlands. The thing is it is not only without skin the cloves are also not seperated so you basically have one big ball of garlic. I also wished for this to exist before, but when i accidentally bought it i got so creeped out, that i didnt use it anymore since.

    Ratatouille is so delightful! I usually cook it with some kalamata olives and capers if I have them, and serve with a smidge of sour cream - mine also tends to be a bit more like a soup than a stew. I don't know how traditional those additions are, but they're very tasty! I also always make sure that I salt and drain my eggplant before cooking it because it's such a wet vegetable - I wonder if that's part of the reason your fancily plated one was saucier than expected

    Olives are a frequent addition to traditional ratatouille. I'm not sure about the capers though. But ratatouille is one of those dish that is a base to make different things so having fun with it is the best thing to do. As a French, I highly recommend eating ratatouille with eggs to let the yold and that veggie juice mix. Absolutely delicious !

    when you say "with the bread it really works" it make me think about french rustic soupe. Its soupe but with the big chunk of vegetables and hot water, not mixed. And this with a good whole wheat bread or country bread (only satisfying noun for "pain de campagne" in french) will make you happy to be alive.

    Nice one! I like your vidéos, I like travelling with food and with kids, I don't always avec time to cook perfect stuff so I like your ideas to "shake it up" (I don't know if this makes sense 😉. I would'nd recommand the lemon juice à the end end. For the traditional one after cooking it with the lid on, i usually let it cook some more without the lid so the juice evaporate ans the vetgetables confit. It add à sweetness and you Can use the Leftovers on bruschetta or tartine. You offen serve it with rice or pasta. I sometimes skip the eggplant!

    You love beans, you should do a pasta con fagioli dish (traditional Italian peasant food) garlic (original recipe says 20 cloves), bacon/pork cheek, borlotti beans 2 cans then add ~2L chicken stock and cook for like 6h slowly, then throw pasta into that same pot and cook for 30 mins. Comes out a delicious warm creamy beany broth with pasta

    Heyy classic french raratouille is soooo so similar to polish dish called Leczo! I think you'd love it! It's really so delicious it always transform me to my childhood since my grandma made it in summertime when I visited her 🥺🥺🥺

    I actually made this and I didn’t enjoy it but my friends and family did my the reason I didn’t like it was because I felt like it was under seasoned due to the watery nature of vegetables but all my friends and family said I did fantastic Personally not going to devote 4 hours for a meal I wouldn’t enjoy but if asked by my mother I would gladly take the time

    @@TomozAlpha Hi, French girl here ! Just a warning that the traditional version of ratatouille is also very juicy but that's what makes it so good and comforting. That juice contains all the veggie flavour as well as the herbs ! Because, as a Southern French dish, you *need* to put a lot of herb. Traditionally, you'd put "herbes de Provence" a bouquet made of roughly the same amount of thyme, oregano, rosemary and savory. It is also very good served cold the next day. Don't hesitate to add oil too ! Enjoy ! =)

    KWOOK i recommend you doing rice with milk, the natonial dish (wich is "la bandeja paisa") and rice with coconut, fish and fried platan slices, from Colombia (arroz con leche , la bandeja paisa, and the rest is already clear) btw coconut rice , you can make it with lined coconut and to the fish you can put it with Lemon the green one , and the platan has to be hard and green and you can put salt ot the platan

    In Syria We have the smae dich , same vegetables , seasoning thing , but we add small chuks of chicken or meat , finally we serve it with nicely cooked rice

    I always knew Ratatouille was made of vegetables, but why did it look like pepperoni when Anton Ego took a bite 😭 I don’t really like vegetables, but this would seem real fun to eat with a Remi topper on it 😂

    its probably meant to be a scraps dish regardless tho: cheese ontop (prior to adding it to the oven) would be pretty good on it right...riiiight?? maybe add it 30 min before its done so the cheese doesnt burn idk
