Today We're recreating the famous Ratatouille (Confite Byaldi) from Pixar's movie, Ratatouille! This is our new series Lets Recreate, where we make dishes from animes, movies and shows! Ratatouille is one of our favorite movies, and we have been wanting to make this dish for a very long time.

There was no exact recipe for the ratatouille from the movie, so we tried our best by watching the movie and researching Chef Thomas Keller (the creator of the dish for the movie) to figure out what he did to make the ratatouille. Also let us know if there are any other dishes you would like to see us recreate!

@@Discontinuedalready7372 False. Anton Ego never laughed at it, he just picked up his pen and prepared to review it earnestly. It was the ex-chef that laughed. The only reason I remember is because its when I knew that for all of Anton's ego, he at the very least wanted to give them a fair go.

Whenever I would eat scalloped potatoes I would eat it like in the scene lol. I still do tbh!
I can see why when he tasted it, he was immediately sent back to his childhood. He could remember and taste the time and care and affection that went into the meal his mother created. Once you see it prepared, you truly appreciate why someone would find such deep sentimentality in this dish.

Nothing beats momma’s cooking
our chef made this for us the last time i was in france, she spent all afternoon preparing it, along with a main course and dessert, and it was the best meal i have had to date. thank you Sylvie!

That's what Ratatouille is in a nutshell; stewed vegetables that poor farmers in the 18th Century needed to use at the end-of-season harvest and were mostly overripe or beginning to spoil. They couldn't afford to be picky about it. Forget all the fancy cooking and high cuisine presentation, that's a relative new invention trying to reimagine and overcomplicate something that's always been simple and straight to the point. This is why peasant dishes are and forever will be popular, they are nutritive, healthy and relatively easy to make, precisley because they were born out of necessity not to win an award

Yes the portion on the plate feels too small.
It’s beautiful. I make this once a year but really wish I had the time to make it more often. I’ve thought about making the version like the one the critic thinks about when he drops his pen and has the flashback to when he was little. It’s more like a stew with chopped vegetables. Probably save a lot of time and maybe I would make it more often. But this version is like a work of art 🙌🏼
Can we all just agree that this RATAOUILLE was the splitting image of that shown in the movie 😍😍

To be fair, when Remy wanted to cook the dish for Anton Ego, Colette pointed out that it was “a peasant dish” so the fact that it’s literally a baked salad isn’t too far fetched. People make do with what they’ve got, and this version of Ratatouille likely appealed to Ego because A.) the dish was a prominent meal in his childhood, and B.) the dish was given the high-end restaurant flair Ego had come to know as a food critic.

People say its just a baked salad and that its a peasant dish, but to me, that looks so delicious, i can almost smell and taste all of the juice from those stewed vegetables just looking at it, looks delicious on its own, but it could also go with a great medium rare steak.

One of the biggest lessons taught by cooking shows is that a simple dish is not a poor dish, an easy dish or a low class dish. It's how the ingredients are used and the skill that goes into using them that dictates what the final dish will be. Judging a dish like this because of it's ingredients is like judging a luxury SUV for not being a Corvette.

It's funny, the reason Remmy knows how to make the food critic's mom's recipe for ratatouille (enough to take him back to his childhood) is because the house he was cooking in, at the very beginning, belonged to the food critic's mom. She was the one who chased them out with the shotgun, and it was her recipes that Remmy had been studying before then

You can literally just use a ceramic plate wrapped in aluminum tin foil as a baking pan if you don't have one.

It's very pleasant watching your videos because they're not usually like most cooking videos I've seen where it's like a fast paced action movie with quick cuts one after the other. This one cherishes the time or moment of cookong.
The whole process and final product of this video has got to be the most aesthetically pleasing version of this recipe I've seen so far.

I made ratatouille in high school. Not this fancy (it was a culinary class and we did get wine for it but our teacher would pour it in for us) but it’s time consuming but it was delicious. Our teacher had such a great pizza recipe and gave us all a copy but I don’t have it anymore :( it was one of the best pizza I’ve ever had and I got to make it but I don’t know to replicate it. It’s been 10 years since I tried it and I’ve never forgotten that pizza.

this actually looks amazing. I've always wanted to try it and to this day I still want to. God it looks so good
It was a great idea to recreate that iconic dish and the execution was wonderful. I didn't realise that there was zucchini in it, i used to think it was potato. I don't know what the fuss is about and why people were disappointed. But it was quite clear that no meat was used in that recipe and it was a vegetarian dish. As to why the food critic went into flashback after tasting the dish would be because as someone mentioned that it is a pheasant dish and it could be that the critic was from an agricultural family growing up eating the same veggies so it reminded him of childhood but probably he would have been stunned by the fact that such a humble preparation, with minimalistic ingredients, could be elevated to the level of a gourmet dish. That could be attributed to the magic created by chef's hand (intuition). I enjoyed the end scene of this video, it was one level ahead of the movie scene. In the movie the critic was taken back to his childhood with his pupils growing as large as saucers. However he regained his senses and wrote down his critique. But in this video the critic was totally blown off and he lost the grip on his pen....super hilarious!!!

Amazing!, Only thing i would do different if someone is making it this way and this is completely optional tbh, its too slice the tomatoes the day before and leave them out to dry overnight, that way they wont release all the water into the sauce once you cook the dish making the sauce a lot more rich and concentrated

I'm so curious about the details of the camera work on this. There's something about the composition and color grading that makes it feel like a really well executed CGI cutscene while still being well on the near side of the uncanny valley. It's comfy and pleasing and while I'm not a videographer I'd still like to know more. Anyone else getting this vibe?

Right.. this video has relatively high contrast and low saturation.. But it is warm, also They added black stripes in the top and bottom to make it.. cool looking

I think they use 21:9 ratio format for the video, thus makes you think there is a black bar in the top and the bottom

Too many other channels gucci it up, and in the process, miss the entire essence of it. This is a provincial dish that makes something special out of simple ingedients. Adding truffle oils or unicorn shavings RUINS it.
the way the sauce was prepared was amazing and the cheesy joke reminded me of the movie. You guys rocked that dish!😱

Its a shame it took me so long to watch such an acclaimed movie but I only saw ratatoullie for the first time this year and I am a pixar fan going on 30 plus years. Absolutely gorgeous! Most ratatouille that I've seen have been more "stew" style. This way is way more elegant but I do understand that it's way more work, too.

If you don't have shallots, you can also use leeks. Nice mild flavor and I think it works well with a lot of shallot dishes
