I usually make this once a year since it takes a while, but I think it's quite fun! Costco also had a sale on beef tenderloin, which made me very excited.

    As a video editor who cuts a lot of food content, this was a dream to watch. So much time and effort not only into the food but the production quality from filming, to editing and perfectly edited copy. In a world full of noise and fast cuts, this was a pleasure to watch. Amazing.

    I just really needed to say this. I lost my love for cooking. I had a passion to possibly go to culinary school. I genuinely enjoyed it. I cooked for my girlfriend and her daughter (that I saw as my own) in our own little 2 bedroom apartment almost everyday...until she broke up with me. I was devastated. It wasn’t until over a month I realized when I finally would eat food I ordered it, never cooked. I couldn’t cook for myself. It was something that I gave to the little family I had made for myself and no longer have. But this video. This was lovely. Artistic. It just really touched my passion for cooking. I can tell it’s something you genuinely enjoy, and I can relate to that. It’s been what feels like forever since I gave myself a night to just get some fresh ingredients, open a bottle of wine, and create something. I’m off work tomorrow night, and I think I’m gonna do it again. But this time, I’m doing it for myself. Thank you.

    Don't worry mate. Take some time for yourself, pick the best ingredients you can find and cook your favourite meal, just for yourself. Pair it up with good wine and indulge. All by yourself. Enjoy!

    Probably you need some more time to accept things and love yourself. The passion for cooking was and will always be inside you, give yourself some time to find that love for cooking again. Don't rush things, everything will come on their way eventually. Stay strong.

    Last time i talked about recipies and what was going on my kitchen was when i had a handmade spinach pie on the oven while i was cooking i tthink it was beef on the pot while i had in mind to make a dessert and thinking all the great ingredients i had on my fridge to follow a greek traditional recipie for pie with herbs. They made fun of me. Ohh 4 things... too much..you re not serious... I never talked them again. Never shared with them even one slice of a cake... all the time they thought they knew everything... always all of them so judgemental... I was thinking somehow this could be changed someday but like that it would never did... from a point of view im glad i didnt offer them anything i have cooked till now.. cause sure they didnt deserved it.. For some people to cook is equal to express your feelings to show that you care for someone and you want him have fun somehow...and it doesnt matter if your kitchen is small with only 2 chairs or its luxurious with 10 seats... it doesnt matter if your ingredients are the most expensive or not... its what you think when you cook for people you care... And for the story... the spinach pie was almost instant in small oven pan so it was about 6 pieces.. the meat on the pot was for two for 1 day... and the desert could be preserved in the fridge for many days... i was cooking different things at the same time like i was waiting to accept people wanted to have a buffet in fornt of them.... and they were talking like that....

    *_72-hour timeline_* *Thursday 8am* : Prepare the beef, season it well with salt, wrap it in saran and a towel, put it in the fridge 0:10 *Thursday 8am +* : Make the Duxelles (2 hours to boil it down), let cool down, put in the fridge 1:08 *Saturday 1pm* : Sear the beef, coat with dijon mustard on all sides, season with pepper, wrap in saran and the towel, put in the fridge 4:18 *Saturday 1pm +:* Prepare the pancake, put the prosciutto fanlike on it, put the Duxelles on top, then the beef, roll it tightly, wrap it again, put it in the fridge 5:43 *Saturday 11pm:* Make the wine sauce from beef stock and wine, boil it down 1 hour, work in the flour butter and brown sugar, let thicken up, cool down, put on the stove again, heat up and work in frozen butter squares to make the sauce silky and smooth, let it cool down, put it in the fridge 8:00 *Sunday 10 am:* Prepare the puff pastry, release the beef from the fridge, brush the puff pastry with an egg yolk/milk mixture, put the beef-pancake roll on top of the puff pastry and roll it tightly, close off the ends very good to prevent it from popping open, wrap in saran, put aside (in the fridge). 10:45 Prepare another sheet of puff pastry and roll it with the lattice roller (diamond pattern) 11:42 Release the beef from the wrap, brush the outside of puff-pastry-beef-roll with the egg-milk mixture and place the puff-pastry grid carefully on top 11:58 Brush again generously with the yolk-milk mixture 12:23 Place in the oven 12:35 *Sunday 1pm:* Voilà, 72 hour Beef Wellington 12:58 Enjoy your meal 🙂

    Not only did your Wellington turn out beautifully, the video itself was very enjoyable to watch. My late husband, a chef, made me a lovely Beef Wellington for our 1st New Year's eve together when we were dating. He set a table up in front of the Christmas tree, complete with nice tableware, linens, & candles. With the lights from the tree & the candlelight, we had a delicious, romantic dinner. He asked me to marry him that night. We had nearly 30 years together. Thank you & your marvelous "Baby Wellington" for bringing one of my best memories back to life.

    As someone not exactly a pro in the kitchen, i love your video because it was simple, wholesome, and accessible, which I adore. The ingredient you've combined here are mouthwatering. My taste buds were practically doing a happy dance just watching this video. In my opinion your passion and enthusiasm for cooking is super infectious!     Idk what it is about this guy, but whenever I watch him I feel as though my problems just melt away. His videos calm me in a way that no other creator can. Oh I almost forgot, you could also throw it to oven at max tempature wait 10 mins abort it and commit warcrimes, it makes pretty good sauce too. Maybe even better.

    Hey Alvin, just a small tip, Your cast iron skillet makes oil angry at you because there's water in the tiny little pores of the cast iron, normally you fill those little pores with oil and that makes the skillet nice and non-stick. A cleaning method i recommend is putting Salt and Water in the pan, boiling it while you lightly scrape the surface with a spatula/spoon to remove gunk, toss out the water and salt mix, keep the pan upside down on the counter with a little gap for water vapors to escape, then after an hour or 2 turn it over, lightly oil the pan and use a piece of paper towel to rub the oil around the surface of the skillet. you'll have less angry oil and your skillet will last longer ;)

    @@alankiedrowski54 in the medical field it is kinda required that you know some Latin because of all the things you are working with and same goes for biology and science, in this there are A LOT of Latin terms. Another one is in history, very important to be able to translate most text from the past bacause it was one of the main languages and in studying languages such as German, Italian, Spanish, etc, because they mostly derive from Latin and understanding Latin, the words and the grammatical rules helps tremendously to study these languages both as to learning them but also if you study their origins.

    in a real restaurant setting where they serve a wellington like this, they'd have a big bin of duxelles, sauce, and dough sheets made up every other day, and a steady supply of aged beef (in smaller, individually-sized cuts) rotated in the fridge every other day. They'd only need to assemble and cook the final product when it is ordered. Mise en place aren't just pretty french words, it is the key to a well-run kitchen, large or small.

    My mom and I get together every Monday night and cook dinner together. We don't always make a big deal out of it, but sometimes we like to challenge ourselves and cook something special. I showed her this video and she absolutely loved it so we decided to try and make your Beef Wellington. I can honestly say (and I know my mom would agree with me) that this is the best thing we've cooked in the entire nine year history of "Monday Night Dinner." And it's not even close.
