    People so worried that the workers are not wearing gloves. I believe they forget that the cheese is made from something that is squeezed out of a live cow.

    Shannon Palmer yes, in most professional kitchens they don’t use gloves. gloves are disgusting anyway, I would much rather use my uncovered hands that are consistently washed and cleaned rather than a pair of gloves that touch everything and cross contaminate and remain unchanged

    Not to mention that it's loaded with salt and its sitting in brine (very salty water). People don't realize that such high levels of salt completely obliterate bacteria.

Did you know why most of the chefs in Japan are all men ? because they are very strict to hygiene and before women in Japan were discriminated because they believe that having menstrual period is not hygienic to touch food. Now that they're accepting more women chef because of modern era. I don't know where did you get that fucking logic. Is it because if it made by a man's it is disgusting and if it is made by a woman it is so clean? SMH

    People complaining about the way she says "mozzarella" are probably not Italian. You're just not used to hearing the word pronounced correctly, because that's how you say it. She doesn't even have a "weird American accent", she says "mozzarella" like an Italian would say it. If u don't know the language how can u even say that there's an accent?

    Everyone complaining about her saying mozzarella in Italian obviously didn’t watch the entire video she also pronounces the location or shop in Italian.... she lsnt forcing lt you can obviously tell she speaks Italian. When l speak English and when lm mentioning something that ls Spanish origin or has a name in Spanish l pronounce it in Spanish because l am fluent and it’s my first language .. and yes l speak with a perfect American accent. She isn’t forcing it that’s how you pronounce the word in Italian......... anyone that speaks 2 or more languages does this ... calm down Also l read a comment that was in English with some Italian words thrown in and because Italian is a Romance language l pronounced them with a Spanish accent in my head.... even if It’s not pronounced like that in Italian... that’s just how my Brain registers it

    she is forcing it. she slips at 4:20 mark and says it like american pronunciation. pronunciation is about where you are (i.e., who you're speaking to) - it's not just origin of a word. US and UK pronounce oregano _very_ differently.

    blessed girl, have you ever eaten a pizza? It is made bare hands.. but more in general all food (when you eat in a restaurant for example) is handed with no gloves in the majority of the cases :) no food is perfectly clean. The ready-to eat mixed salad (the one coming in plastic bags) for example contains millions of bacteria.. which our body is perfectly able to kill :)

    It's getting easier to get cow's milk mozzarella in the States these days. There are a lot of people learning how to do it, and selling it at Farmer's Markets as well as small shops.

    Its because she completely lacks an accent whenever she speaks any other words, then you can tell shes over-accentuating the word "Mozzarella".. Thats all. Its like talking about Mexican food casually with an American accent, then out of nowhere rolling your R's for any Spanish word.

    there is differences the package method mozzarella in my country, they didn't pack it with the brine but they vacuum it. is there any differences in taste also? what's the function of the brine on package ?

    ORIGINAL Mozzarella is produced in Campania between the provinces of Caserta and Salerno. It 'a typical local product. Umbria have other cheeses. www.mozzarelladibufala.org/dop.htm

    Yes, buffalo milk mozzarella is made only in Campania. But , cow milk mozzarella is made in many other regions of Italy.

    ... This whole cleanliness freak-out came out with the industrialization. This is precisely what they sold - "cleanliness" and if you bought from peasants you were a dirty freak that eats from the ground. And you don't want to be that guy, do you guy? I eat from the ground and so did my ancestors and so did yours. Matter of fact we used to eat dirt when we were kids, your body adapts and becomes more resilient the more you don't act like a total pansy with it. Hair? Dirt? Fly's? that's probably how some of these cheeses were discovered. But you don't think that far, you can't see any further than the slogan they sell you at the supermarket and act like an entitled piece of shit when these men give you the fruits of their work. Any man, no matter his color, age what have you, is going to be extra careful with the fruit of his labor, because he's PROUD of it. It's proud first money bonus with corporations it's money first and everything else that makes me make more money. If dirt in the cheese is not going to make me lose money, you can be damn sure there's going to be dirt in the cheese. And you may think, "well you know damn well that dirt in the cheese is going to make them lose money so "money comes first" is an efficient quality guarantee" and I say, Sure!, hair and dirt in cheese will make them lose money now, but dirt is symbolic here, it can be anything that you don't see and don't feel immediately, like preservatives, chemicals, flavor enhancements and so forth. What we feel is gross now, won't be to the kids tomorrow, our views on right and wrong, tasty and yuck change, but the bottom line is as long as the money comes first, your health will always be second. STOP feeding this monster that is only interested in money and look towards people that take pride in what they do. Think for yourself, go meet your cheesemaker or make a friend with a guy that likes cheese and knows his cheesemaker, make connections, talk with people, stop disconnecting yourself from the world you LIVE in.

    European's have been making cheese's far longer than American's..say over 5000+ year's. I would trust an un-gloved Italian making Cheese than an American-Italian who wouldn't know that Spaghetti and meatballs is not an "Italian" food. And if one can make me a Fettuccine Alfredo without Cream or a Ragu made with Rabbit and White Truffles and placed on Tagliatelle..I would be surprised. Now can we talk about why American-Italian's don't usa la mozzarella di bufala aka Mozzarella made with Water Buffalo Milk? I asked one American-Italian restaurant owner who was newly arrived from Napoli this...he whispered in my ear in Italian "Shhh ... Non così forte! ... Non voglio che questi stupidi americani conoscano il tuo segreto! Lascia che mangino le cose americane di plastica ... non sanno niente di meglio.".

    I absolutely cherish your videos. I am nearing the point in my life for a large scale trip to Europe. If one wants to visit places like this, somewhat out of the way of the larger areas, can one get by without speaking Italian or is it a necessity?

    Rayan Aww, is the American used to the American ads telling him his food industries are perfectly hygienic? Sorry to disappoint you here, but the US has one of the most loose regulations regarding food quality and safety. You are much more likely to catch germs from American food than from this handmade mozzarella.

    designamk1 Yeah there is. They're working with boiling water and hot cheese. Gloves would melt and they cant feel the cheese directly to check if its good
