Work on your knife skills, learn how to pinch gripnthe knife, proper guide hand techniques.. learn the motion and just go buy a bunch of celery and practice. I watch tons of youtube videos when starting out, by the time i did go to culinary school I had decent knife skills.. im not as fast as Josh but learning how to cut certain things and proper techniques is paramount. After a while it's just second nature when you cook a lot.

Rachel Ray was a bit more honest with her 30 minute meals. She opened meat packages, jars, pulled things from the fridge, etc. None of this sitting in the clear tiny bowl ready for use nonsense.

@@jorionedwards The speed of cooking at home is being compared to getting take out. At home you are doing all of the prep and cooking, meanwhile the person is driving to get the take out and back. That is why people complain about not factoring in the prep time for home cooking.

@@theraven.4 So the complaint is less "cooking takes too much time" and more "getting the food takes too much time"? Or is it "getting the particular meal I want?" For the context of the videos, the former makes sense. However I get the same complaint about simpler meals like roast chicken and veg, which makes me think it's the latter.

A way to make fryable rice, is pre-fry the rice kernels in oil in your pot until nice and toasty and opaque, then cook as usual and it comes out nice and separate and perfect for frying.
