It's actually quite good. I tried it (minus the sous vide, because what normal home kitchen has that or use it that often to buy one..). You can use any cheese powder, it does not have to be mac and cheese brand or that variant. You don't even need that grade of steak Guga or FutureCanoe uses, so as long as you know how to control cooking temp and butter basting. You can cover the steak with the powder, let it air out and dry for a bit (you can do this in an oven on the lowest temp setting), then cook on a pan.
