LEARN HOW TO MAKE THE BEST CREAMY VEGAN RAMEN RECIPE EVER!
LAY HO MA! Where would we be without ramen? Ramen is just so comforting, delicious, and it really can be easy to make. Join me in this episode and learn how to make an easy creamy vegan ramen recipe that will change your life. Let's begin
Ingredients:
1/2 cup coconut cream
100g extra firm tofu
3 fresh shiitake mushrooms
60g broccolini
1 tsp cane sugar
1 tsp toasted sesame oil
2 tbsp chili oil ( • Most addictive Red Chi... )
1 1/2 tbsp + 1 tsp soy sauce
1 tbsp white sesame paste
140g ramen noodles
2 1/2 cups veggie stock ( • Vegan Ramen Broth | Ve... )
2 tbsp avocado oil
2 tsp dark soy sauce
chili threads to garnish
Directions:
1. Bring a pot of water to boil for the noodles
2. Scoop out the coconut cream from the can and set it aside
3. Mash the tofu into a crumble with a fork. Finely chop the shiitake mushrooms and broccolini
4. In the ramen bowl, whisk together the cane sugar, a splash of toasted sesame oil, 1 tbsp chili oil, 1 1/2 tbsp soy sauce, and the white sesame paste
5. When the water comes to a boil, cook the noodles to package instructions. Stir the noodles occasionally
6. Strain out the noodles and set aside. Toss the noodles with a splash of toasted sesame oil
7. Whisk together the veggie stock and coconut cream in a pot heating on medium high heat
8. Heat up a nonstick pan to medium heat. Add in the avocado oil
9. Sauté the tofu for 2-3min. Then add the broccolini and mushrooms and sauté for another 2-3min
10. Add 1 tsp soy sauce and 2 tsp dark soy sauce. Sauté for another minute
11. When the broth comes to a boil, pour it into the ramen bowl. Place in the noodles followed by the sautéed veggies
12. Garnish with some chili threads and another tbsp of chili oil

    I am not a fan of tofu or mushrooms, but because I've made another one of Yeung Man Cooking's recipes, I decided to make this exactly the way the recipe calls for, even the homemade broth and chili oil.     I made this two days ago and it was PHENOMENAL! The best ramen I‘ve ever cooked myself. On top of that, the timing of this video was perfect. My local Asian supermarket finally started carrying good frozen Ramen noodles. I am in heaven. 😍 I‘ll cook this again next week and already looking forward to it.

    What blows my mind is the fact that I cooked this with my best friend and the dish turned out just as yours!     Creamy ramen! Where has this been my whole life! So my 14yo and I are gonna make this tomorrow or Friday!     This dish produced such a nice memory for my daughter and me. It was her first night of college, first night staying in the dorms, almost no one staying there yet, so it was big and empty and quiet, and she decided to come to my house for dinner. I knew she liked Ramen and I had seen this recipe and it was intriguing. I made it almost exactly as shown, although I did not have homemade vegetable stock on hand. I only modified the recipe in one way: I added 1/8 tablespoon of dried mushroom powder, which gave the broth additional depth. We also agreed that about 25% more broccoli would be even better. But all of those are quibbling; we sat down to eat it and our eyes got wide: depth, complexity, salt, fat, acid, heat and umami to beat the Band! We’ll make this again.

    I try to incorporate at least one vegan meal into my daughters' weekly meals and I love that you have a creamy recipe that doesn't use nuts. The cashew recipes look wonderful, but my oldest daughter has a severe nut allergy so it's nice seeing a creamy dairy-free alternative that's also nut-free.

    Looks a lot like Burmese khow suey, which is very popular in my country, India. I'm sure fried garlic and onions would go well as a garnish, as would a sprinkle of chopped green spring onions and coriander leaves!

    delicious! made yesterday, having another bowl today. took 5 hours to make the stock- used cloves, star anise, ginger and garlic in it, also left in the shitake mushrooms to develop the broth. Used tahini instead of sesame paste, tasted fantastic.

    Just found your channel. I'm speechless. Your demeanor is so chill while making such exquisite food and the notes you give about the dish are so perfect to accurately describe what you are tasting/feeling to give the viewer the best sense of what you are sensing. I felt like I could physically taste the ramen. I was in a trance this whole video, almost like I was right there and you were cooking for me. Bravo, easiest sub ever.

    I have no words. Plus your bowl is so beautiful. Your aesthetic choices are incredible :) I actually started using medium heat more because of you. I realised I used high heat for no good reason as a default.

    This looks delicious, as always. When I'm mixing small quantities of oil and soy sauce and other liquids and powdered spices, especially if there's miso paste, I put everything in a small jar and give it a good shake. I always keep little jars of different sizes for this purpose.

    Layer upon layer of flavors! This is what I’ve been missing in my meals for many years. Even though I have the necessary blender to make cashew cream I am glad that you used coconut cream in the recipe. I will make this soon. In the meantime, attempting to clean AND organize my small kitchen to emulate yours. Hah!!! Amazing video/editing/storytelling skills!

    I think that just went immediately to the forefront of my next ramen cooking adventure. Adore creamy ramen, love mushrooms. I can appreciate the taste sensation of freshly blended cashew milk, but I liked that you offered a simple alternative of coconut cream.👍

    My fiancé and I LOVE your recipes!! We’ve tried a few (including your veggie broth one) and they taste amazing every time! We have to change a few things here or there to make it more stomach friendly (we both have really bad Gerd and other stomach issues), but try really hard to keep to the original recipe. Can’t wait to try this one!!

    Love love creamy ramen broth.. peanut satay ramen is our weekly go to 😁 can’t wait to try this one…got everything lying in my pantry!! Also, I was wondering if you ever had a chance to eat vegan creamy ramen at JINYA ramen in Canada or US!! Would love your version of that ramen 🤤🤤🤤

    @@soniakach2980 so sorry that I didn’t see this sooner! I’m not sure if you’re still curious about this or not, but I don’t find that it adds more sweetness (aside from the cane sugar in the broth) but it does add a richness in flavour, if that makes sense
