Loaded Chickpea Salad Recipe | The Mediterranean Dish
My family's secret chickpea salad is loaded with crunchy veggies, fresh herbs, and a bold zesty dressing!

INGREDIENTS:
🔹 1 large eggplant, thinly sliced (no more than 1/4 inch in thickness)
🔹 Salt
🔹 oil for frying, preferably extra virgin olive oil
🔹 1 cup cooked or canned chickpeas, drained
🔹 3 tbsp Za’atar spice, divided
🔹 3 Roma tomatoes, diced
🔹 1/2 English cucumber, diced
🔹 1 small red onion, sliced in 1/2 moons
🔹 1 cup chopped parsley
🔹 1 cup chopped dill
FOR THE GARLIC VINAIGRETTE:
🔹 1-2 garlic cloves, minced
🔹 1 large lime, juice of
🔹 1/3 cup Early Harvest extra virgin olive oil
🔹 Salt+Pepper

Susie, a great set of knives is a must for someone who enjoys cooking like you do. I have a set from the company Cutco. They are very expensive, but so very good. It makes food prep a piece of cake. I no longer buy precut vegetables since I bought these knives.

I use GLOBAL knives..love them ...made from one piece of carbon steel. Sharp..comfortable..easy to use and well balanced

I use jarred🤭. Sorry, been a homemaker for 40 years, and it doesn’t make any difference that I can see.
Calphalon knife sets with sharpening blocks are great.
It is a colorful and very delicious meal! Appetite comes out! I want to eat it!

Great video you're doing on the Mediterranean chickpea salad since I have cans of chickpeas laying in my home. I would add feta since I'm Greek Goes great with this salad. TY for all you do! I recommend Wüsthof knives because I have them & they're German steel made in Germany. I bought my Wüsthof that came iwth the chef knife & paring knife from a store in NYC that left a few years ago for a great price

RE: Knives Regardless of the brand, if used regularly, all knives need to be sharpened about every six months. A new knife is also going to feel awkward in your hands. A few suggestions: 1) Get a 1,000/6,000 combined sharpening stone and watch KZreads on how to sharpen knives from Burrfection. You CAN bring that old, cheap knife back to life and you won’t be intimidated by having to learn how to sharpen a new, more expensive set. Spend time on the 6,000 grit side of the stone to get it razor sharp! Stropping helps too, but isn’t necessary. 2) Regardless how slight, using a knife blade as a scraper ( 2:38 ) will dull the knife. Admittedly, I’m sometimes guilty of this, but I try to flip the knife over and use the spine to scrape food into a bowl whenever I can. 3) Honing the knife with a steel before every use will help MAINTAIN THE EDGE. Using a steel WILL NOT keep a knife sharp. 4) Keep knives sheathed or in a block to keep the edge from getting dinged. Many just let their knives float in a drawer without protection 😖. “May the odds be ever in your favor”

If you need to sharp your knife use the bottom or a plate or mug and use the edge. That way I sharp my knives. They are from ikea but they really work
Global Knives.... I’ve had mine for years and Williams Sonoma will sharpen them for free.

About your knife…. I sharpen my inexpensive knives each time I use them , before and after using them, so they stay sharp. One thing that dulls a knife is using it to scoop up the chopped bits by dragging the sharpened edge across the cutting board. If you want to use it to scoop the bits, turn the knife over so the unsharpened edge scrapes on the board. Give it a try😉

You asked for knife recommendations. I have three. You must try a knife yourself, its a very personal choice. Kitchen Aid has a very good line, holds an edge well. Wolfgang Puck has excellent knives. Elegant steak knives. Weighty, good feel. My all time favorite though is from a company called Chicago Cutlery. Sharp sharp sharp. All worth a try.

On the printed recipe it says lime for the dressing, however the video says lemon. I made it with lime but in my head thought lemon would go better possibly??? Which was correct? Also love the website, so many great delicious recipes, thank you!!!

Really wonderful chef’s knives are made by Chicago Cutlery. All their knives are great. They are perfectly balanced, and very comfortable to the hand. It’s my absolute go to knife for everything. Mine is a six inch, wooden handle. (And I put it in the dishwasher😱). It’s thin enough for tomatoes, and will cut London broil into nice thin even slices too. They hold an edge for a looonnngggg time. They are also reasonably priced. I also highly recommend German made knives. Forget the Japanese knives hype, I’ve never seen one that can hold a candle to Chicago or Henkles. Thank you for yet another yummy recipe!

You’re welcome! I once made the mistake of buying my Armenian in laws a good set of knives, because the ones they had were so dull, and I guess it’s bad luck or something to buy someone knives. And I said well it’s probably worse luck to cut your finger off because you’re using a dull knife😂.🤷♀️. P.S. I’m 60, so I’ve seen a lot of knives.

Yes. You’ll want to make sure to grab pita pockets (not the flat kind) and warm them up slight so they open easily. Or you could simply eat them separately, up to you

I often use canned chickpeas for salads and don't typically find them tough. Perhaps letting them marinade in the salad dressing for a bit?

I love all sorts of beans and cook them a lot. Not sure if you used salt to cook your chickpeas, but salt will toughen up the bean. It's best to use salt or anything that contains a salt for after they're cooked.

Kramer knives by Henckels - kramerknives.com/product-category/licensed-designs/meiji-collection/. Global/Shun, etc. are very good but not even close when compared to Kramer knives.

Every thing was taken from us the Middle East/Arabs/Muslims/Islam and was labeled as Europeans. Laws/ science etc.. taken from prophet Muhammad and his family. Sweets and food from Arabs. Resources🩸 for God sake give us a credit.
