    I've made these for years, and I can't stress enough that you follow his directions in putting the meat in the freezer for about 40 minutes before cutting. It makes a world of difference. Also make sure you have a VERY sharp knife. If you don't follow this, it will be very labor intensive and frustrating.

    I'm a sharp knife fanatic for sure, but don't have any issues slicing up a belly without putting it in the freezer - keeping it chilled in the fridge has always been sufficient to keep it firm for easy cutting.

    There is an old school barbecue at a market place in our town over here in Central Eastern Europe that makes the juiciest, yet crispiest, most tender pork belly I ever had, true comfort food. Btw, I hope to get to the US next year for a road trip, and I am going to get me a few of those fitted Ariat button down shirts, I wear shirts and jackets to work everyday and some of those colours and patterns are gorgeous!

    It's September 18th, and as of yesterday, I have made every single recipe in all of his cookbooks. I have all of his seasonings and a couple of other assorted knickknacks for cast iron cookware. I got to say folks this man.... he knows what he's talking about when he tells you this is delicious and / or nutritious, and not only will it fill your belly, but it will feed your soul!     Always love me some burnt ends. They look like they turned out pretty amazing. As for Lariat, a pair of the best boots I owned were Lariat. I wore them out till they kind of fell apart. About 9 years. Unfortunately as much as I loved them I decided to go with American made boots and clothing...but I still miss those boots.

    If you’re a Costco shopper, they have been carrying pork belly for a while now. Whole or sliced in smaller packaging. Advise….Get the whole slab as it won’t last 😂😜

    Mr.kent, my dad had the same mustache as you to a tee, but his was red like his hair, his friends called him Yosemite sam,, my dad also loved to cook and had family over all the time, he once smoked a goat and told everyone it was venison, they loved it, and they all took some home, he never said a word, lol, I miss you so much dad, thanks for teaching me too cook also.

    Brunt Ends is always good. YUM even the burnt fat. I got hungry for a ham sandwich i did. So it was ham and cheese with onions, last night b4 going to bed YUMMY.. I do my cooked ham different from most people. I like to put my ham in a baggie. Sprinkle ground up cinnamon on it heavy! Then pour honey all over it heavy! work it around in the bag. let it set over NIGHT YUM Then you got this Cinnamon, Honey Ham > can do any thing with it

    Looks great and I can taste it from here. What I like to do, not to hijack, is slice a pork belly like bacon and put slices on the Blackstone. When I lived in Wisconsin we called it 'side pork'. Now in NV and winters in AZ we call it 'side pork' and we get...'what is side pork'? Keep em' coming guys.

    Cowboy Kent, you are one of my rare KZread heros! Quick comment on cooking with food contacting aluminum, any acidic foods (vinegar, citrus, almost all barbecue sauce) etches the aluminum, putting aluminum in the food. Aluminum is bad for people...Just sayin'. For disposable cooking pans, I use aluminum, but line with parchment paper...wet paper and scrunch it in a ball to soften it, you can make it fit into anything, and it doesn't add any off-taste to food. Thanks for sharing your talents, and your obvious love for our canine brothers and sisters. Harold

    Kent, always wipe the cutting edge of your knife off on a piece of cloth or your apron after you sharpen it. It'll have steel burrs hanging of the edge.

    Pork Belly is used for "Chaysyu" or "Kakuni". When I made once about "Kakuni", recipe was; Pork Belly Block 500g ★Water 600g ★Soy Source 180g ★Japanese Sake 150g ★Suger 100g ★garlic 5g ★Ginger 5g Salt and Pepper to pork. Heat Flypan and bake pork from fat side. Add source ingridients and make bubbling it (If there is junk of vegitables put these). Boil pork with source fo 15 min. Turn over the pork and set lid and boil for another 15min. repeat for total of one hour. Put the pork and source into ziploc and put into frige for one night.Take off the harden fat.
