I'm BooneBake.
Today, I made a lemon roll cake with lemons bursting with fresh juice.
I made a roll cake by spreading lemon curd jam on a soft and moist sponge cake.
It tastes really good if adults eat it with coffee and children eat it with milk.
It's relatively easy to find compared to other fruits, so if you're looking for a refreshing and sweet cake, try making it.

● Cup measure standard
237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (38% milk fat)
(Chocolate is chopped, flour is before sifting)
● Lemon curd jam
2 yolks
55g sugar
1 lemon zest
a pinch of salt
10 g corn starch
60g milk
45g lemon juice
25 g unsalted butter
3ml lemon liqueur (optional)
food coloring (optional)
● Moist roll cake
(Mold size: 38cm*29cm)
30 g white chocolate (3 Tbsp)
40 g milk (2 Tbsp + 2 tsp)
25g vegetable oil (2 Tbsp) - [grape seed oil, canola oil, soybean oil, corn oil O / olive oil ]
3 yolks
15 g (1 Tbsp) sugar
63g cake flour (1/3 cup + 2 Tbsp) - (can be replaced with 55g all-purpose flour + 8g corn starch)
1 g baking powder (1/4 tsp)
3 egg whites
45 g sugar (3 Tbsp + 1/2 Tbsp)
food coloring (optional)
● Lemon Syrup
40g water
30g sugar
3ml lemon juice or lemon liqueur
● What about lemons?
It is native to the Himalayas and grows well in places where the climate is relatively cool and where there is no change in climate.
Lemons are widely grown in Italy, Spain, California in the United States, and Australia, and lemons grown along the Mediterranean coast are preferred.
The fruit is oval-shaped and has a green outer skin, but when ripe, it turns yellow and its scent becomes stronger.
It is harvested and ripened when the skin is green, before it is fully ripe. The seeds are egg-shaped and have sharp points at both ends.
It has a strong sour taste because it is high in vitamin C and citric acid.
Lemon oil is squeezed from the outer peel and used as a raw material for drinks, perfume, and lemonade, and the juice is used as a raw material for drinks, vinegar, and cosmetics, and is also used as a flavoring when making cookies. The outer skin is pickled in sugar to make confit, which is then cut into small pieces and used to make cakes.
Sugar is added to the juice and boiled to make jelly, and the pulp is mixed to make marmalade. The fruit is sliced thinly and used in fried dishes and cocktails.
