Ingredients for the batter:
500g beef (whole lean, without fat and without threads)

750g minced meat
1 tbsp margarine / ghee
50ml oil

3-4 tbsp pine nuts
1/2 teaspoon pepper
1/2 teaspoon paprika powder
1 teaspoon cinnamon
1 teaspoon salt Preparation:
Place bulgur in a large bowl. Gradually add water and knead well until everything is well covered. Let stand for about 10 minutes. Fry the pine nuts with a little oil and set aside. Fry the minced meat well, then add the remaining oil, onions and spices and fry everything together well. Finally add the pies. Switch off the stove and place it in the cold. If you don't have pureed meat, puree the meat and onions separately with the food processor. Rub the bulgur apart and knead with a little water. Keep kneading and adding water. Now add the pureed onions, spices and the pureed meat and knead everything well. Gradually add water until a soft batter is formed. Put the dough in the fridge for about 30 minutes.
Take out of the refrigerator after approx. 30 minutes and knead well again for at least 10 minutes. Again and again add water until a soft, tear-resistant dough is formed. Then you take 1 small piece of dough, shape it into a ball and prick it with a damp finger or a carrot and turn the dough piece with your finger or with the carrot until there is a hollow inside for filling. Moisten fingers and palm repeatedly. Press your finger against the other palm and turn it at the same time. Fill the dough with approx. 2-3 teaspoons of minced meat, close the opening and turn it over and over on the palm of your hand and press at the same time until the point is pointed. Fry brown in the deep fryer at 170 ° C. If you make several and want to freeze, place the balls on a baking tray lined with baking paper and put them in the freezer for 2-3 hours until they harden, put them in the freezer bag and freeze. And if necessary, fry the frozen balls brown in hot fat at 170 ° C.
