With the buzz all over the food world focusing on the brand new shiny toy of the moment, it’s easy to forget about the legacy restaurants that paved the way for a thriving restaurant scene now. We're talking about long standing culinary institutions, the likes of which still hold on to the top notch quality and service that’s enabled them to still be relevant. I worked at a prime rib restaurant in Salem, Oregon in 1976 and 1977. It was simply called the Prime Rib. There was a sister restaurant in Portland, Oregon. The one in Salem had a great view of the Willamette River and also used the stainless steel cart. The meat and Au Jus was kept warm by charcoal. All requested sides were served from the kitchen. When I started there, each rib roast was encased in rock salt and slow roasted all day at a low temperature. For whatever reason they changed the roasting method to no salt pack and higher temperatures. In my opinion the prime rib was never as good. We did make Yorkshire Pudding using rendered beef fat and the Au Jus was made from the pan drippings and juices. I ate a slice or two of prime rib every night and never got tired if it. On Sundays they offered a four course "Farmer's Breakfast". It was way too much for most people to eat. Back then there were a lot fewer big eaters. The courses were: 1. Fresh fruit with toast 2. Pancakes 3. Eggs, potatoes, along with bacon, ham, and sausage 4. Apple fritter Such a great memory.

My last meal would absolutely be prime rib, no question. I only get to have it a couple times a year, always on Christmas at least. I've only ever went out to eat prime rib a few times, but most times I end up preferring the way I cook it myself. Prime rib is one of those things that in reality is really easy to cook, but also really easy to mess up at the same time.

That REDness achieved at Lawry's is never duplicated by my family, always turns out grey with no juices and the outside crispy. And when I told them its because Lawry's sets it at 200 for 24 hours, my mom who payed 45+ for the cut at costco just say, i have to sleep now, 500 for 10 mins na lang. I hate how she gives up after already investing too much and is ok with the normal people way, this red yet cooked technique is why they pay benjamins to eat just once at a carving buffet line essentially.

No the slow roast method works. Most supermarket cuts are about 5-8lbs. Season the roast generously the night before. Bring out the roast in the morning. Start at 10am. Set the oven to broil and blast it for about 20 minutes until brown and then lower the oven temperature to 225 and let it sit for 45 min per pound....for example, a 6-pound roast will cook in 5 hours.

Lawrys franchise steak house’s are a top tier chain and serve the finest USDA dry aged prime beef, with certified culinary trained chefs. Ruth Chris is an expensive horrible steak house that serves wet aged USDA prime beef and they train their cooks in house. They are the most horrible and expensive steak house chain out that sales prime beef at dry aged prices. You will easily spend 100 dollars a plate at Ruth Chris. I’d pay that at lawry’s because they actually give a damn and are on par with top local owned mom and pop fine steak houses. They train you to their methods but you come in a trained chef already, unlike Ruth Chris garbage.
